I agree wholeheartedly, but the problem with going in with your full body like in hooks with a hook-elbow is that it leaves you extremely exposed if you punch trough or miss. This is because you are so close. That's why I personally prefer to use maximum rotation power from the shoulders but very little from the hips. If I hit an elbow from beneath or from above I go in with my body too. I think it's just a matter of philosophy really. What suits best for your style so to speak.

i got hit once on a training.. i was sparring with my mate and he tried to hook me.. well he missed but cought me with his elbow my an accident .. it hurts as hell.. during my 3-year training, i got kneed, kicked, punched, i had 2 broken ribs, 1 broken toe, 3 fights, and the elbow hurts the most
you right but the problem lay in that most of the people dont really put "body" behind those elbows strikes - they just swing an arm and it all - if you punch like that you will never knock anyone out - simple true.

While I do find elbows to be one of the most enjoyable aspects of muay thai and admit that you can easily land a more effective hit with an elbow than you can with a punch, it's just not for me. The reason why MMA guys say this, is because they don't know how to throw proper elbows. Look how fast, sneaky, and explosive these guys are. Watch UFC guys try to do this in clinch, slow, and telegraphed.
If he's been actually kickboxing for 3 years he'll likely smash if you try that. Your best bet for defense would be to find quality wrestling/BJJ private lessons and drill your take downs and top control. You can then completely eliminate his advantage by putting him on his back.
