I love, love, this recipe! It’s fast and easy and tastes so good, even for someone like me, who never cared for eggplant in my entire 76 years!
PS I used Manchego cheese, grating it over the honey. Yum! (I treat myself to a small wedge of Manchego a few times a year. Grating it extends the reach of its fabulous, complex flavour.)

We had an eggplant and didn't want the same old thing. Made this for the family. Fairly easy, no fail recipe. Some eyebrows went up concerning the honey, but it was a HIT!

I think this is quite the southern mediterranean dish. We serve it in Greece in a similar way using feta cheese. But my mother who was Cuban , used to use bread crumbs to fry the berenjenos ! topping off with HONEY ! . Now that's a twist . Can't wait to try this with the goat cheese...... !!!

I learn so many cool tips from him, like salting the eggplant slices and letting them rest to draw out bitterness. Most of his recipes are deceptively simple but the results are gourmet.

Here's a cook's tip for those who love eggplant recipes like this ... look at the bottom end - choose a round "navel" as opposed to a slot shape. They have fewer seeds. Said to be less bitter.
Jacques Pepin says the one with the round end is male, and one with more of a slit has more seeds it’s a female eggplant

Just found you, and I love your channel for so many reasons! Delicious, healthy, easy recipes. You explain things that help me understand cooking better; such as salt taking away the bitterness, smoking oil changes the flavor, and frying is better with reduced water. Your so easy to listen to and watch (you have a great presence and camera command). And you explain how to cook with vegetables that I know little about (like eggplant). I'm so glad I found you!

Okay, I'll admit it was because you are so devastatingly handsome that made me click the first time, but now I'm hooked on the cuisine! (Well, mostly that's it, but I still think you are a smoke show😉)
I can't believe I never tried eggplant until a few months ago. My mom hated eggplant, so we never ate it growing up. I was given a couple of beautiful eggplant recently, and decided anything that pretty has to be good to eat! I got my trusty Better Homes and Gardens cookbook out and found the recipe for Eggplant Parmesan. OH MY!!! How did I not know about this delicious dish???
Your eggplant looks even better, so I'll be actually buying eggplant now so I can make this.
BTW, I made your rice and garbanzo dish with the egg-crust baked topping a few nights ago. I thought I cooked enough for leftovers, but my son loved it so much I don't think there was a grain of rice left!

If it has seeds inside and comes from a flowering plant, it's a fruit. This includes eggplant, cucumber, tomatoes, and peppers. They are often considered botanical fruits and culinary vegtables but are absolutely fruit. Look up the case against the supreme court! The USSC went to court over how to tax tomatoes and "vegatble" won.

I just finished cooking this for my husband and I. I was amazing! I followed your recipe to the letter, except I used maple syrup rather than honey. I served it alongside roasted bacon wrapped asparagus. A great Friday night meal! The only thing that could top it would be if my kitchen would magically clean itself!

I remember visiting Spain with my parents, many years ago and eating everyday at a local restaurant, where they served something like this, I don't remember the honey, and I ordered it practically everyday and the restaurant owners, who we got to know, (that's Spain for you) invited us to an all afternoon meal with their family and asked us what we'd like to eat and guess what I asked for?

I whipped a little bit of paprika powder into the flour and dippin the eggplants into breadcrumbs, after the egg-preparation, like a wiener schnitzel, to get some little extra crispness. I prepared the breadcrumbs with a little, little bit of dried garlic :) pretty nice ! 👌 thanks for this wonderful recipe mate :)

When I make eggplant parmesan, this is how I fry the eggplant. Back in the olden days, my Italian grandmother used to put the sliced eggplant in a colander, cover it with a plate and put something heavy on top to drain the water, which she said made it bitter.
That's the best way !
I worked at a restaurant in Madrid, La Sevillana, and one of the cooks, Beni, was from Al Andalus, and would make this much loved dish for customers, however, for our merienda in the kitchen, she sandwiched a slice of cheese between two of eggplant, then dredged and dipped the stack and dropped it in the deep fryer which of course was filled with dark green Spanish Olive Oil. As soon as they were crisp she removed them to a plate only to be snatched up by greedy fingers. Oh my happy mouth despite burning my tongue every time! Best part of the job. Don’t ask about cleaning toilets in a workers cafe, nor washing the dish towels by hand in a bucket of leach every night and hanging them out the window.

Thank you this is such a simple dish. I love it and I love eggplant recipes.I am interested in Spanish food. I live in Trinidad and Tobago which is only 6.5 Km from Venezuela and I love their food as well. Here in Trinidad we call eggplant, 'baigan' which is hindi for eggplant. We also call it 'melongene'. I am looking forward to more recipes from you.
