Gluten Free Oven Fried Eggplant
== Ingredients ==
- 1 cup Gluten Free Panko Crumbs
- ⅓ cup Gluten Free all purpose flour
- 2 eggs
- 1 eggplant, sliced into rounds about ¼ inch thick
- Extra light olive oil
- Butter, well chilled
- Salt
== Italian Seasoning ==
- 1 tsp. dried basil
- ½ tsp. dried oregano
- 1 tsp. dried parsley
- ½ tsp. garlic powder
- ½ tsp. onion powder
- ½ tsp. dried thyme
- ½ tsp. dried rosemary
- Pepper to taste
- ½ tsp. Marjoram
== Directions ==
Take your sliced eggplant and lay the rounds out on a rack and sprinkle them with salt. Repeat the process on the other side as well. Let the eggplant sweat for about 20 to 30 minutes. This will help to pull out some moisture in the eggplant so that they will crisp up easier.
After 30 min. rinse the eggplant under running water to remove the salt. Pat the eggplant dry with paper towels.
Preheat your oven to 400 degrees F and coat your baking pan with a light coating of olive oil.
In a wide bowl, combine the panko crumbs, flour, and all the Italian seasonings. Whisk the eggs in a separate bowl.
Dip a slice of eggplant into the egg mixture and then into the panko crumb mixture to coat on all sides. Then place the slice onto your prepared baking sheet. Continue doing this until the pan is full. Be sure not to crowd the pieces so they can brown up properly.
Shave paper thin slices of butter on top of each piece of eggplant. Place in the oven for about 30 minutes or until golden brown. Turn the slices over half way through the cooking time.
You can garnish with chopped fresh parsley.

I have cooking eggplant into my Greek traditional recipes for years. Always in sauce with rice ect so this was a welcome change and I absolutely loved it. I cut them a little thicker, cooked them a little longer and they were moist and tender inside. Very much like they were fried. I Agree with Chris and plan on using it for a base for a casserole type dish for eggplant parmesan. Thank You Robin!

Skip the drain and use less salt or cheese in your coating. That is an extra step that goes against the draining. Like drying yourself off after a shower and then rinsing yourself off in the shower again, to remove the lint from the towel. Unnecessary.

I made this tonight & it was a hit, it'll be one of my go to recipes, it's crispy on the outside & soft inside, my only issue with the recipe is that's way too much panko & flour mixture and two eggs for one eggplant, unfortunately I hadn't thought to use the remaining mixture on my courgette as someone suggested below. Yeah, that's been my experience too. Never tried baking. I found a recipe just yesterday that called for baking eggplant parmesan like a lasagna, w/no breading or eggs. Will be trying that as I'm allergic to egg. This recipe sounds so good too tho.
It's not soggy if you slice salt and leave on paper towel for an hour and pat dry
You can bake on parchment no need for oil
Instead of butter add some shredded parm

deborah brown We had a lot of green tomatoes last year. I have a couple southern recipes that call for bacon grease. I cannot bring myself to do that although I'm sure they taste great. I did them a lot like this only I use the dark extra virgin olive oil. They were awsome.

Tamir Yardenne it's not Vegan if you use egg or dairy products like butter. I was wondering how to make this vegan, so I may try by substituting the eggs for plant milk, and the butter will be substituted for Earth Balance non-dairy "butter".

Put a little Grapeseed oil in bottom of pan. 3 min on each side--and enjoy!

This recipe was delicious! I've always fried my breaded eggplant in oil on the stove, but your recipe and technique was easier and tastier, less messy with clean up, and maybe a little healthier too. I tried your recipe for the first time several months ago, and my husband has been asking me when I am going to make it again... he prefers your recipe instead...YAY! I'm with him. Love your seasoning too. Thank you for sharing with us and I will be preparing breaded eggplant using your recipe from now on for sure! BTW, thank you for mentioning to people that this could also be made into a delicious GF meal just by using GF flour and GF bread crumbs... people who have recently been diagnosed with Celiac and are looking for recipes will appreciate it, I'm sure. My daughter was diagnosed quite a few years ago and back then, we struggled to find a variety of GF items she could eat. Much easier now, with companies like Bob's Red Mill and Progresso (to name a few) making GF flour and bread crumbs for people with Celiac.
