Three things I love about this channel: 1) The recipes *work*. I've tried several of the recipes and it's virtually impossible to get them wrong. 2) For me, the ingredients are easily available - and most of the time, they're relatively cheap. And they don't take hours and hours of cooking (which can really hit your energy budget if you're counting pennies.) 3) My next-door-neighbour is Spanish and I gave him some of the mushrooms I made from a recent vid and he thought I was trying to trick him with food I'd bought from a Spanish restaurant. Like I said, these recipes *work*.
100% agree. So many cooking channels have videos about food I can’t afford or can’t find the ingredients to make. Everything here is easy and available. And so so delicious!!

This video came just in time -- I'd just bought some fresh broccoli this morning. So I made it this way tonight, and it was delicious. Your channel is one of my favorite cooking channels. I'm always picking up good cooking tips along with new favorite recipes.
I like how you described what to look for in a good head of broccoli. Not everyone knows how to choose produce. And thank you for not speaking too loudly. I use a salad spinner to remove the excess water after washing and then turn the florets out on a kitchen towel to dry more while I prep other things.

EXCELLENT idea.....I am also going to use a Meyer lemon rather than a regular one. Combine that with the cheese you recommended, and it should be a real winner.

you can also make broccoli soup with the stem. Chop it up and cook in some broth of you choice and then put into a blender add heavy cream or milk then blend delicious. You can also put some carrot and onion into it as well. Cook with the broccoli then blend.
Very cool idea -- I'm always looking for ideas about how to use brassica ends and bits (since many veggie-broth recipes recommend not using brassica bits). I bet this would be delicious, and you could always top off the soup with parsley or celery leaves for color and extra flavor.
I cannot thank you enough for posting all these amazing recipes! I was recently forced to go vegan due to long covid causing food allergies to dairy, gluten, and meat. The recipes you post are so easy/quick to make, tasty, and healthy! Your channel has made the switch a pleasure instead of a chore!!!
I have to say, I don't like broccoli. I don't like the texture and the flavor is boring to me, but I still eat it. I eat it, not because I like it, but because it's good for me. With that being said, I'll have to try this. Maybe it will make broccoli a vegetable I actually like and not just endure.

made this last night. Used frozen broccoli florets instead of fresh. Had to modify cooking times a little but it still came out fabulous. The squeeze of lemon juice off heat was enhancing.

ALBERT , your money shot was perfect a perfect bite size and a perfectly polite number of chews and a perfect (not fake) look of complete satisfaction on your face. Congrats Albert on a perfectly executed recipe including a genuine "MONEY SHOT" ! Good one but got an even easier one and also super tasty. Get a bag of already clean and cut broccoli from your nearest supermarket. Pierce few times and microwave 3- 3.5 mins to taste. While this is going, get a frying pan, good bit of olive oil and fry the garlic (you can get it also already cut from the frozen section) until bit golden. By the time this is done the microwave is also finished, get out the broccoli from the bag and cover with the olive oil and garlic. Salt to taste. This is a truly 5 mins dinner/lunch! You're welcome

The stem is deelish to just peel and eat as it is raw.
I always slice it, 1 cm thick, and fry it up with some salt and pepper. Delicious!
