Here in the south Texans think they the best when it comes to the barbeque wars but Memphis, Carolinas, Bama and Georgia will all have something to say about that. Some of the best barbeque in the world in these places.

California BBQ (regardless to what style you use) typically requires you to use California wood (Almond or Plum), but I had forgotten about Avocado, so good on you!
Damn, I keep watching all these videos on here and now I'm starving and craving BBQ.. This was a good one tho, I wish I lived there, I would definitely go eat her food.. And I will try mixing in cabbage next time I make collard greens cuz that looked so good. She was very well spoken and clearly has a lot of love for what she does. That's when you know whatever they make will be the best because they're not just putting out whatever just to make a buck. Quality and heart.

Love this. She makes a good point about not being bound by tradition in California. Same reason that NYC is probably the best single city for BBQ in America for my money. So many places in Texas and NC and Kansas City and Memphis have to make the local version of BBQ and not do anything else. And I'm born and raised outside of Raleigh.
