Thanks for your recipe. Looks good but a couple of questions. 1) your recipe does not add water but coconut milk only. Other recipes have coconut milk and water. Is either way fine? 2) is it important to squeeze out the water? I normally don't.
Hi, thank you 😊 I use coconut milk only to increase the creaminess of the bingka ubi. You can use a mix of both, it's up to you. Squeezing the water out and replacing it with coconut milk is also to add extra fat. It's a bit of a hassle but the results are worth it. Give it a try and see how you like it!
Looks nice but why didnt you use pandan leaves for flavouring the benggang. There are many varieties of tapioca some are naturally yellow in colour for which you dont have to use colouring. Thanking for sharing. ❤
Suriname has a lot malays ancestor there...most of them originally frm Indonesia n Malaysia/ Malay land....that is why there was bingka ubi or cassava cake there.
Will it affect how the bingka turn out with very less sugar? I lobe eating this but most of the time I find it is sweet to my taste bud. Trying to do diabetic friendly ubi bingka.
Not at all, you can definitely reduce the sugar! 😊 I've had bought ones that are definitely too sweet, and it overpowers the flavour of the cassava. Let me know how it goes for you!

It takes around 2.5 to 3 hours, not including cooling time. You can make the process faster by grating using a food processor 😊
