    Thank you for this wonderful recipe. How does your batter not get sour after fermentation? Mine usually gets sour by second day itself.
    Also how many minutes to keep idlis in the steamer ?

      I transfer to the fridge in the morning.

      It becomes sour for us as well- in almost any tropical/☀️ Sunny places.
      So, NXT morning we must divide batter- keep aside as much needed for that time cooking and rest store in fridge 1st thing in the morning when u open ur fermented batter without mixing anything -before starting any other work.🔸
      Later u can mix what ever u wish & make ur recipes of ur choice for the day.
      🔸next day/next time,
      Take out batter from fridge little quantity means how much ever u need for that time - when needed just 30min before only.
      Idly/dosa Batter will stay fresh for 3-5days.
      Still sour batter recipes like ponganaalu/paneeyaram/ paddu can be made.
      When u feel batter is more sour- don't use/reduce tamarind in ur chutneys.

      @@pb7399 oh sorry nothing worked for u.🔸 If u storing ur batter in 👎🏼vessel- then try storing in ✅airtight steel or plastic container.
      🔸 Placement of that container must be very near/next to freezer shelf depending on ur fridge model. (Few refrigerators have freezer in bottom & few have it @ top.)
      Last thing I can say is if u are Not from South India- then u will feel the batter sour smell/taste definitely more 😁😉 than it is- as u not used to tht from childhood 🙏🏽.

    We should use whole urad dal with black cover instead of polished urad dal with cover removed. The cover will provide not only extra prebiotic fiber but also lots minerals and vitamins.

    Using fermented dosa batter for more than one day is not recommended. It is a wrong practice.
