I wrote out the recipe (hope it helps someone/feedback appreciated): Cheesy Flatbread Ingredients/Shopping List (makes 16 flatbreads) Ingredients Amount (Prep) (Notes) Sea Salt 1 teaspoon/5 grams Filtered Water 1 ¼ Cup/300ml Unbleached All-Purpose Flour 3 Cups plus 1 Tablespoon/420g (plus more for flouring) Mature/Extra Sharp Cheddar Cheese 3 ½ ounces/100g (finely grated) Butter 7 Tablespoons/100g (melted) Directions Abbreviations - C - Cup, TB - Tablespoon, tsp - teaspoon, oz - ounce Equipment/Special Tools Rolling Pin, Pastry Brush, Pizza Cutter , Cheese Grater , 10”/250cm Skillet & Spatula(s) Prep Work (Before Starting to Cook) Hint - Cooking goes much smoother if you measure out and cut ingredients before cooking. Cheddar Cheese - finely grate. Butter - melt butter and cool to room temperature. Making Cheesy Flatbread Making Dough Add salt (1 tsp) and filtered water (1 ¼ C) to large bowl and whisk to dissolve salt. Add all-purpose flour (3 C) and mix to combine. Knead by hand (3-5 minutes) in bowl. Dough will be sticky. Add flour (1 TB) and continue kneading until a smooth ball forms (3-5 minutes). Cover bowl with plastic wrap and rest dough (15 minutes). Shaping Dough Lightly flour counter top and place ball dough ball on counter. Divide dough ball into 4 equal pieces. Take each piece and form a ball in your palm with seams at bottom closed. Cover dough balls with a tea towel. Take 1 dough ball, lightly flour top and place on floured counter. Use a floured rolling pin to thinly flatten dough ball into long oval (estimate - roughly 12” wide by 18” long/300mm wide by 450mm long). Adding Melted Butter & Grated Cheddar Brush melted butter over top of long dough oval. Use a pizza cutter (or knife) to cut dough into 4 even strips. Place a line of finely grated cheddar down middle of each dough strip. See 4:51 of video. Take each dough strip and roll lengthwise (somewhat tightly) and flatten/compress in palms (so it looks like a cinnamon roll or pinwheel). Repeat these steps with remainder of dough (to get 16 cheesy flatbread pinwheels). Place pinwheels on lightly floured plate. Rolling Out Cheesy Flatbreads & Dry Frying Place dry/not oiled 10-inch/250cm skillet over Medium heat. (Butter in dough acts as oil when frying.( Lightly flour counter, top of dough pinwheel (with dough layers visible) and rolling pin. Roll out to about 10 inches/26cm (slightly smaller than your skillet). Place flatbread in skillet and fry for 3-4 minutes while flipping occasionally (with 2 spatulas) until lightly golden brown in spots on both sides. Note - It’s best to roll out one flatbread while another is frying. Repeat until all flatbreads are rolled out and fried. Keep cooked flatbreads on a plate under a tea towel to stay warm. Question about this, your notes say it makes 16 flatbreads. The way it looks in the video is that you make 4 flatbreads out of the dough. When you cut the strips, you are rolling them into each other. For example, roll one of the edges up first, then put that roll on top of another strip and roll that up also. So each strip gets rolled into one another, essentially, until the last one. Did I see that correctly?
@@Sarah-jg4ne Good question. After the dough is made, it's split into 4 pieces. One piece is rolled out and cut into 4 strips that become 4 flatbreads. Note at bottom of screen in video says "repeat steps..." 4 dough segments times 4 flatbreads per segment is 16. Hope this helps.
@@greghanlon2235 I'm not trying to be argumentative, please believe me on that, but I do believe you roll each strip into the other and make it into one ball. If you look at 5:04 in the video it shows "roll all the dough strips into one roll". I know that the creator doesn't show putting each rolled section into the next one, but at the end of this section around the 5:16 point, you have a really large ball that could not be created with just one strip of this dough.

Watching from Raleigh, NC 😊 tweaked the recipe a bit: added 1/2 tsp of garlic powder and onion powder and parsley, added a tsp of chives, doubled the cheese, added 100 grams of bacon bits. Followed the recipe the rest of the way and essentially made a combination of a savory crepe and a pancake, but it was AMAZING (if you copy me, ABSOLUTELY use cooking spray or you won't be able to dislodge it from the pan 😂)

I made a batch of this today, having almost no experience in making these kind of bread or anything that has something to do with dough, and it worked just perfect! I was so happy when it turned out exactly the way I imagined it - even better. You were right when you said anyone could do this at home with such simple ingredients. I also made another batch and changed the filling to some sprinkle of garlic and pepper. I think it took quite a lot of time for me because I was a beginner literally going in blind, but I'm sure this is gonna be my usual afternoon snack from now on! I used to make these 40 years ago from a cookbook with bread recipes from around the world. This one was from India and the recipe suggested garlic and diced spring onions. Medium yellow cheddar is also good. Best to double or triple the recipe. They go fast. You can also use them for quesadillas or sandwich roll ups. Etc.
Love the global twist with garlic and spring onions from the Indian recipe! I'll definitely try cheddar and doubling up next time-sounds perfect for a cheesy roll-up! 😋🍞🧀

It's called Granite pan/cookware (but it doesnt actually use granite, as in the rock/material. Most of them uses aluminum cores and then covered with layers of ceramic or porcelain enamel(think of like your teeth coating) and other nonstick coating. Some of them still uses teflon and speckle granite dust for appearance so be careful of buying one) Also you should'nt use them in high heat applications(and dont leave them on heat without any food for too much) because the coating might deteriorate[first sign is it will look burnt/discolored then the nonstick properties will be gone]. Also same with teflon, dont use metal utensils as those can scratch the coatings off
I just use a cast iron skillet. Note that it heats up easily so do a test batch so you do not over cook or scorch the bread. Once you play with the pan you will know the best temperature to use. I have something similar that I picked up in Mexico years ago but did not care for the results.
My absolute fave. Made this tonight following your step-by-step guide & it was beautiful🤩just didn't add enough oil so it was a little dry & not silky/glazed like yours. Will give it another go at the weekend ⭐️

I thought this bread looks like ROTI too. The lovely East Indian woman who showed how to make this, rolled the dough into long thin sections, then "spiralled " them into a round flat bread about 5 inches across. Very flaky and delicious. Thank you for sharing this recipe with us ❤

Hello. I just watched your excellent baking presentation. It's awesome!! In our Somali food culture, we've a very similar bread named "sabaayad". What I learned from you today is the addition of butter and the cheese which add flavour and softness. One can also add gum arabic (gum acacia), an organic emulsifier for a better mouthfeel. From Singapore....yes, we call it paratha/prata...we use ghee and the cooking involves oil or ghee (sometimes plenty of it!!)

I thought this bread looks like ROTI too. The lovely East Indian woman who showed how to make this, rolled the dough into long thin sections, then "spiralled " them into a round flat bread about 5 inches across. Very flaky and delicious. Thank you for sharing this recipe with us ❤

Hello. I just watched your excellent baking presentation. It's awesome!! In our Somali food culture, we've a very similar bread named "sabaayad". What I learned from you today is the addition of butter and the cheese which add flavour and softness. One can also add gum arabic (gum acacia), an organic emulsifier for a better mouthfeel. Thanks for sharing.
