Does the batter need any baking powder/baking soda? Normally tempura batters are similar to this except that they also add some baking powder or baking soda.

Hello Marion and Mom! I am so excited about this recipe, that I am on my way to the Kim Phat(Asian store)to buy the wings! I would like to know if you keep the salt/pepper brine on the wings or do you wipe it off, and can this method/recipe be used on legs/all chicken or only wings? Also, do you deliver to Canada as I really would like to purchase the coconut sciracha?
Aw thanks for the hello to mum too! And you don't need to wipe off the salt mixture just dip them straight in the batter. Just don't use too much of the salt and pepper mix at the end...you can always add more but you can't take it off! And yes, you can use legs or other chicken parts. You will just need to cook the larger pieces for longer during that first fry...until cooked all the way through. I hope that helps! And no sorry :-( none of my products are in Canada just yet. You could use rice flour. FYI corn flour is what we call cornstarch in Australia :-)
