  • CHINESE PINEAPPLE TARTS (PASTRY)!
    Recipe yields, 90-100 pcs
    INGREDIENTS: 600gm Homemade or Store Bought Pineapple Paste/Jam
    INGREDIENTS (PASTRY DOUGH):
    375gm All Purpose Flour
    2tbsp Corn Flour
    220gm Unsalted Butter
    50gm Icing Sugar
    2 Large Egg Yolks
    2tsp Vanilla Extract
    BAKE (using Innofood V88 Convection Oven):
    1. Store Bought Pineapple Paste/Jam:
    (a) Single Tray: Bake/Prebake in preheated oven @170c, Top+Bottom Heat + Convection mode only. Prebake 10 minutes + Bake 6-8 minutes.
    (b) Multi-layer: Bake/Prebake in preheated oven @170c, Rear Heat + Convection mode. Prebake 12 minutes + Bake 10-12 minutes.
    2. Homemade Pineapple Paste/Jam:
    (a) Single Tray: Bake/Prebake in preheated oven @170c, Top+Bottom Heat + Convection mode only. Bake for 18-20 minutes.
    (b) Multi-layer: Bake/Prebake in preheated oven @170c, Rear Heat + Convection mode. Bake 20 minutes.
    NOTE:
    1. DO NOT OVERMIX the pastry dough.
    2. Cookies MUST be completely cooled down before storing.
    3. Cookies last up to 10 days.

    Hi. Where did you get this rolling pin? The dough has a consistent thickness.
    Is the pastry texture nyonya type? Slightly crumbly, little crunch?

      I got the rolling pin from shopee. The pastry’s texture is crumbly type.

      Sorry for my late reply. It’s pretty subjective to individual.. For me, it doesn’t.

    My pastry always stick on the cookie mould even i put dough in the fridge,.

      This is what I usually practice.
      1. I don’t softened the butter.
      2. Do Not over mix the pastry dough.
      3. Press the mould gently onto the dough (shaping). Use fingers (gently) to remove it from the mould. Practice…😅
      If you have done the above & the dough still sticks to the mould, try to flour the mould.
