PERFECT BUTTER POUND CAKE
PERFECT BUTTER POUND CAKE!
Recipe yields, 2 loaves (8” or 9” loaves)
INGREDIENTS:
400gm Super Fine Flour
2tsp Baking Powder
1tsp Salt
400gm Unsalted Butter
280gm Caster Sugar
6 Large Eggs
1tsp Vanilla Extract
100ml Full Cream Milk
BAKE (using Innofood KT-V88 Convection Oven):
• Bake in preheated oven @180c (Top+Bottom Heat only mode) for 20-25 minutes, remove cakes & make a split in the center of the surface, return into the oven, continue to bake @170c (Top+Bottom Heat only mode) for 20-25 minutes (or till cake turns golden brown or insert skewer in the center, comes out clean).
A. 9” Pan: Bake @180c for 20 minutes, return bake @170c for 25 minutes
B. 8” Pan: Bake @180c for 25 minutes, return cake bake @170c for 25-30 minutes.
NOTE:
1. For those who have sweet tooth, suggest to increase sugar amount to 320-340gm.
2. By making a slit in the center of the cake surface, it will crack beautifully along the line.
3. Keep leftover cake 3-4 days in airtight container (room temperature).

    Hi sis, for thick chunk soft cookie will the baking function rear oven with fan still work or top and bottom with fan? Which better?

      If u bake more than 1 tray, use rear heat+convection mode. If baking just 1 tray, use top+bottom heat only mode. The recipe is for soft & chewy cookies texture, so for the oven mode just refer to 🔼

      Hi! For my unit which was the 1st batch of the V88, the timer runs from the time I press on. For the new batch of the V88, the timer will start to run once the chamber temperature has reached (there will be beeping sound) the temperature that you’ve set.

    It’s so funny that I made some frosting to test out and I don’t really like eating much frosting, so I was trying to think of a simple cake just to use it up, and I said “maybe hot milk sponge, but I probably need to make it in a 9x13 to use all the frosting” and then I saw this. 😂

    My pastry always stick on the cookie mould even i put dough in the fridge,.

      This is what I usually practice. 1. I don’t softened the butter. 2. Do Not over mix the pastry dough. 3. Press the mould gently onto the dough (shaping). Use fingers (gently) to remove it from the mould. Practice…😅 If you have done the above & the dough still sticks to the mould, try to flour the mould.

      For this particular recipe, adding the corn flour is to create a crumbly/flaky texture in the cookies.

    Gracie, could I use this cheese icing for my black bottomed cupcakes or is it to light and fluffy? Your machine seems to take a long time to whip cream.

      Hi! This frosting goes well with the black bottom cupcakes. Alternatively, you may just whip up some whipping cream & icing sugar if you prefer lighter frosting. As for the stand mixer, if it’s not bcoz of recording purpose (the steps & how the texture changes which is helpful for newbies), I would had used the highest speed from the beginning to expedite the process.

      There is function to set the modes. Just press whichever mode that you want to use for specific bakes.

      Hi Jasmine! I’ve been using the V88 oven for more than a year now. So far this oven that I’ve been using has no issue. I’m able to bake sourdough bakes & others, so I’d say it’s a cost effective oven. Hope it helps

I searched the webs and there people commented that convection oven is suitable for cookies and breads that require dry heating like sourdough and other artisan and it is not suitable for other quick breads like sausage buns, like, coconut filled buns , hong kong style polo pao etx is that true ?
