Singaporean here. We have a lovehate relationship with these tarts. The tastier they are, the higher calorie they have. Each piece has over a hundred kcals and only take 5-10 secs to finish.

Hopefully I didn't missed something. Sorry for mistakes.
Ingredients for the jam:
•3 20-oz of canned pineapple
•250g Sugar
•1 cinnamon stick (you can use a different spice)
Instruction for the jam:
Sift the canned pineapple and put them into a food processor, mix them until its smooth. Cook the smooth pineapple with the sugar and cinnamon stick for 30 minutes, until it seems dry. Lastly, sift the pineapple again for about 20 minutes.
Ingredients for the cookie dough:
•500g flour
•1 tsp of baking powder
•375g of unsalted butter
•80g of powderd sugar
•6 egg yolks
•1 tsp of vanilla
• a little bit of butter
Introduction for the cookie dough:
Sift the flour and baking powder. Cream in a different bowl the butter and sugar. When your butter and sugar is nice and fluffy add slowly one yolk at the time. Afterwards add the tsp of vanilla. Put the dry ingredients into the wet ingredients and fold it until you have a nice smooth dough. Rest the dough for an hour.
Combine both:
Roll out the dough with flour until ur favorite thickness. Cut our the cookies with a round cookie cutter and put the round cookies on a baking sheet.
Make a small ball with the jam and place it in the middle. Take the rest of the dough and roll it out again. Take a pizza cutter and make small strips. Place on every cookie 4 strips in total.
Melt a little bit butter and spread it over the cookie.
Place your cookies in you pre-heated oven (350°F/180°C) for 15 minutes.

In Indonesia we call it Nastar. We used to bake many kind of cookies special for Eid day, Nastar is one them. But we actually keep it traditional shape like make the pineapple jam inside full covered tart, so it looks like almost mini ball

Nastar, is Indonesian way of pineaple cookie, it's exactly the same ingredients, only different in shape
Yes, I was looking for this comment! I lived with my relatives in Indonesia before and they served this at Christmas! I think it's identical to our pineapple tarts, it tastes exactly the same. Btw Nathan Hartono's family is from Indonesia if I'm not mistaken.

The malays call it kuih tat, which basically means tart pastry. It tastes divine and its my favourite festive dessert.
