LAY HO MA!! The thing that is mind blowing about some dishes is how easy it is to whip up and yet has incredibly complex flavour. Join me in this episode and learn how to make an easy vegan chickpea masala curry recipe today! Let's begin.
Ingredients:
3 pieces garlic
1 small piece ginger
1 onion
1 1/2 cup puréed tomatoes
3 tbsp olive oil
1 tsp coriander seeds
2 cardamom pods
2 bay leaves
1/2 tsp pink salt
1/2 tsp chili powder
2 tsp paprika
1/2 tsp cinnamon
1/4 tsp turmeric
2 tsp garam masala
1 1/2 cups canned chickpeas
1/3 cup coconut milk
few sprigs cilantro
Directions:
1. Finely chop the garlic and ginger. Dice the onion
2. Heat up a sauté pan on medium heat. Then, add the olive oil
3. Add and cook the coriander seeds, cardamom pods, and bay leaves for about 1 min
4. Add the diced onion and the pink salt. Sauté for 3-4min
5. Add the garlic and ginger. Sauté for another minute
6. Turn the heat down and add in the chili powder, paprika, cinnamon, and turmeric. Then, give everything a good mix
7. Add in the puréed tomatoes followed by the garam masala
8. Turn the heat back up to medium and stir. Then, add in the chickpeas and cook for about a minute
9. Add in coconut milk. Stir and cook for another 3-4min
10. Plate and sprinkle over some fresh chopped cilantro

I'm Indian and this is authenticly done -- standard food in a Punjabi family. Its delicious. If you're feeling a bit special you can have it with puri which is deep fried bread and its out of this world

One more thing. The dish can give you gas. Add a pinch of caraway seeds and lime juice. The taste gets more zesty. I would add a pinch of asoefetida.

He needs to add cumin seeds. In addition to giving taste it also releases gas from the beans. Secondly instead adding garam masala one could channa masala.

@@Thecodexnoir I would use either two medium size tomato or 1 large size tomato. It depends on how sour you like your curry to be.

I just found your channel. I've seen a few episodes...the mayonnaise, mushroom creamy pasta, and this one. I love the way you show all the steps. It all seems so easy and flavorful. Thank you :)
This has become one of my favourite dishes. The flavour is so rich and complex.
I often add fresh carrots and frozen peas as well since this is typically my main meal. I tend to let it simmer for a an hour or more to let flavours assimilate and let the liquid reduce somewhat. At the end, I adjust the heat level, and add lime, date syrup, and salt as required. It is just SO tasty.

I'm not used to the cup measurement, would 1 × 400g can of chickpeas drained be the right amount for this recipe? and would a 400g tin of tomatoes be the right amount, sorry I might look a bit stupid writing this, it's all new to me, only recently became vegan and got into cooking

I just need to get the corriander seeds, cardamom pods and cinnamon, I have all the other ingredients so it won't cost much either, I make another chickpea curry, but this one looks so much better!
I wonder what happened to the coriander seeds, cadre an and bay leaves. Are they still raw and uncooked. I know this looks delicious. But I wonder if all these spices are still rough under the the tongue. No mention of that. Please explain if everything is smelted and finely Cooke or do we we have to strain the rough herbs. You're the first non-indian cook who uses turmeric as it should be used. Most other cooks would have put in a heaped spoonful.
Quick tip: next time dry roast cumin, coriander seeds, fennel seeds, fenugreek seeds, black and green cardamom. Grind to a fine powder and add that when the onions are done.
And you can find curry leaves...👏😍
