I had our first meal of dandelion for the season last evening! So good. Not bitter at all. I took three large plants, cleaned all the dirt and dead stuff off, cut the bottom inch and a half off ( because the buds were down in there), washed the leaves thourghly, and chopped it up and put it into a bowl. I added 1/2 chopped onion. I boiled potatoes in the skins. I made a gravy with bacon drippings ( I fried bacon and added the chopped pieces to the box). Add and pepper salt to the gravy. When the potatoes are done and you are ready to eat, pour the gravy over the dandelion in the bowl and stir. Eat this over the boiled potatoes. It is extremely good.

My first exposure to this as a madicinal plant was when my mother's aunt said that the milky sap of the plant could be rubbed on warts to make them go away. I don't know if the claim is factual or not.
I have heard that as well, I have no such experience with this, but our lovely women in our lives, especially the older ones, often have much wisdom to share! Be Well!
Sorry for the late reply, yes, they are bitter, but I like them. The potassium levels are some of the highest in the plant world, and balance out the diuretic capabilities. Enjoy!

Yes it is very bitter! There are a couple of recipies in the program notes you can check out, they may help reduce the bitter taste
