How to make Ducuna/Ducana //: St Vincent and Grenadines Style// CARIBBEAN VEGAN FOODIE

    I have read and taken into consideration concerns some viewers had and making improvements as I go forward. I am new to all this and your feedback (given respectfully) will help me improve the quality of these videos.
    Concern that we’re voiced:
    1. Unable to see recipe ➡️ Recipes will now be in the description box
    2. Music too loud, my voice too soft➡️ Will improve in my next video
    3. Talking while words are on screen ➡️ I will try not to talk while words are on screen (Should I make the videos without voice?)

    Recipe: St Vincent Ducuna
    Makes 12 Ducana
    5 cups grated/processed Caribbean sweet potatoes (Do not use North American yam or sweet potatoes)
    ~2 cups grated/processed coconut
    ~1 cup grated/processed Tannia (you can use coco, eddo, taro, or dasheen)
    ~1 1/2 cups brown sugar (add 1/2 cup more sugar for sweeter ducuna or subtract 1/2 cup for less sugar)
    ~2 tbsp grated ginger (or 1/2 tsp black pepper or just omit)
    ~1 tsp vanilla
    ~1/2 tsp salt
    ~1/2 tsp cinnamon
    ~1/2 tsp nutmeg
    For wrapping: Banana leaves and string
    Other options for wrapping: Parchment paper and aluminium foil
    ~Wrap the mixture in parchment paper, then wrap it in aluminium foil (you don't want to put your food directly on aluminium foil)

    In st. Vincent we eat it as desert, where I grew up. My family never eat it with salfish.

      Or with fish broth. I guess it depends on the region.

      Some people like myself also like to have it with souse. It just depends on your preferences. But I love the combination of sweet and salty.

      @@troyeustace1021 In Jamaica we eat it as a sweet dessert but after discovering this version, I fell in love with sweet and salty version.

    We make something like this in Trinidad but with corn, We call it Pamie .

    I’m from Montserrat and I can remember my Grandmother used to make doucana all the time for the family and also share with friends. I am now 60 yrs and living in the UK.
    I really enjoyed your doucana video. The steps are simple and very easy to follow not too much ingredients, which brings out a beautiful colour to the doucana when they finish cooking. I am going to make your recipe using all the ingredients. Hope the colour comes out perfect like yours.
    Did your sweet potatoes had the yellow flesh? Please let me know.

    Doucana is a snack in St Vincent. Antiguans eat it with saltfish and other sides.

    When we buy coconut on Utica Avenue, Brooklyn, we ask them to open it for us. That way, if it’s not good, you just get another. That is done before you pay for it and placed in a transparent plastic bag.

    One mistake, Vincies do not eat our Ducuna with saltfish or any protein. It is eaten by itself as dessert, as a snack by itself OR with hot coco tea for breakfast. Antiguans eat theirs with saltfish, not we! Noo Sa! 😂

      Whoa…I might have got my information wrong…I consulted two Vincies for this recipe and they told me about the saltfish (they live in Canada though so that could be why they were off with their info)

      @@user-xg8ez7nr1o sorry if my pronunciation offended you. While I was making a St Vincent version the word is use in other Caribbean Islands with a myriad of pronunciation, not to mention the word is not indigenous to the Caribbean. When I first decide to make this video, I was going to highlight the recipe from each island, but still haven’t gotten the time to…Yes I might be pronouncing it how we do in Jamaica but I do welcome your feedback on how to pronounce it.

    Right, work smarter not harder. I am definitely going to use my food processor. This might sound crazy but do you think l filling could be frozen for future use? I have a very small family.

    The story is mix up.vincentians eat it as a snack and Antiguans eat it as a dish prepared with salt fish and other relishes.

    Why throw it out? Why not take it back to the store and get your money back. I always return mine
