  • Makes 10 medium sized paimie
    1 1/2 cups cornflour not corn meal
    1 1/2 cups pumpkin puree
    1 1/2 cups coconut puree
    8 tbsp soft unsalted butter
    2 tsp vanilla
    1/2 tsp fresh nutmeg
    1/2 tsp cinnamon
    3/4 cup sugar
    3 ciliment leaves - pimenta racesmosa / bay rum leaves
    10 cups water to boil or you can steam

    Exactly like mine..mamacita or pan or promasa works so well. I find the thinner you press them out..the softer they remain. That was fantastic👍👍👌👌

    My mom and aunt use to make these all the time when I was younger...so I must try these some day since they are longer with me. Great recipe thanks for sharing.

    I made it this weekend, added 1/4 teaspoon salt and golden raisens. Came out perfect. Thanks for sharing.

    This is indeed beautiful. I think in Guyana it's made with the corn flour. Beautifully done 🙏👍❤🇬🇾💯

    Hi. Is it possible to steep the bayleaf in liquid (maybe some milk/Coconut milk) instead of adding it the mixture cause i dont want to bite or eat the leaves accidentally? Maybe in the water used to puree the pumpkin or coconut?

      Love how moist you made the batter. Puree of the coconut and pumpkin made a big difference because I usually grate everything and it come out too coarse
      A couple friends made with corn meal. It was dry and uncooked in the center. Thanks for this method

    Since I've been a child, the only way my mother made this was with corn flour, just as with our pastelles. This looks delish!

    Your videos always make my mouth water! Last time I visited Trinidad we went down south and had the best doubles ever. There was also a street food that I fell in love with but can't remember what it was called. It was eggplant inside a pastry or batter. Do you know what it's called? Pleeeaaase can you make a video teaching us how to make them? It was so yummy!

    I grew up with this, but it was my aunt who made it. I used to love eating that. Looks easy enough. Those ciliment leaves you put into the mixture, can they be purchased or is that from your own tree? If you don't have it, can you still make it?. ...

      The West Indian bay leaves (Pimenta racemosa) are of the Caribbean bay rum tree.

    I just looked up ciliment leaves and the results came up with soursop leaves, are they compatible?

      Siliment leaves are also called bayleaf.

      I do not like raisins in it but you can always add it.
