CHICKEN - N - CORNBREAD DRESSING

  • CHICKEN-N-CORNBREAD DRESSING
    1 whole CHICKEN
    1 yellow ONION, cut in half
    1 stalk CELERY cut in half
    1 CARROT cut in half
    1 teaspoon SALT
    1 tablespoon PEPPER CORNS or ground black pepper
    Wash the chicken and place in a stock pot with the onion, celery, carrot and salt and pepper. Cover with water and cook on medium low for 1 to 2 hours until the chicken is tender. Let cool a bit and debone the chicken. Chop into bite sized pieces and set aside. Strain the chicken stock and set aside. While the chicken is cooking make the CORNBREAD:
    4 cups YELLOW CORNMEAL
    2 cups ALL PURPOSE FLOUR
    4 teaspoons SALT
    4 tablespoons BAKING POWDER
    2 teaspoons BAKING SODA
    4 cups BUTTERMILK
    2 cups MILK
    4 eggs
    Mix all the dry ingredients together then add the liquid ingredients. Whisk together until the lumps are gone. Pour into a large baking pan and bake at 400 degrees F until done, about 45 minutes to 1 hour. While the cornbread is baking In a large skillet:
    melt 1 STICK BUTTER and saute the following for 10 mintues to soften
    1 cup CELERY
    1 cup YELLOW ONION, chopped
    1 cup GREEN ONION, chopped
    1 package frozen SEASONING BLEND (onion, celery, parsley and RED bell pepper) OPTIONAL
    In a huge bowl crumble cooled CORNBREAD
    add the chopped CHICKEN
    1 tablespoon of POULTRY SEASONING
    3 eggs
    cooked VEGETABLES
    10.5 ounce can CREAM OF MUSHROOM
    10.5 ounce can CREAM OF CHICKEN
    10.5 ounce can CREAM OF CELERY
    8 cups of the reserved CHICKEN STOCK
    Mix all together well. Pour into a roaster pan sprayed with non-stick cooking spray for easy clean up. Bake at 375 degrees F for 1 hour covered. Then uncovered bake at 400 degrees F for an additional 20 minutes or until the top gets toasty.

    My Mother taught me how to make dressing. Her Mother taught her. It was the old school recipe! It’s great and I know yours is too!

    Ok I made this recipe for Thanksgiving and everybody loved it loved it even my neighbors tasted it and they said it was the best they ever had my family loves it so I’m making it again tonight for Christmas Eve to take to my sisters house I’m so proud of myself and thank you thank you so much for the recipe

    I love watching you cook. You absolutely starve me to death. I love to watch the love for God that you and John have. It is definitely inspiring. I just recently gave my heart to Christ and I can only pray to be as humble and selfless as you all are. I am watching from Southeastern Kentucky so we cook a lot like you do except I can’t handle the hot food lol. It tears my stomach up lol!!!

    OMG THANK YOU FOR SHARING. I AM FROM THE SOUTH...GOOD OLE KENTUCKY AND WE MAKE THIS CORNBREAD DRESSING FOR EVERYTHING. I WAS TICKLED TO HAVE SEEN A VIDEO THAT SHE MADE THIS VERY SAME RECIPE. THE ONLY DIFFERENCE WAS THAT SHE CRACKED A WHOLE DOZEN OF EGGS, WHISKED THEM AND POUR THE WHOLE DOZEN OF EGGS IN IT TOO. SHE SAID IT MAKES LIKE A SOUFFLE TYPE DRESSING. I AM TELLING YOU THAT DRESSING WAS AWESOME!!!!! I HOPE YOU TRY IT ONCE. IT DOESNT HURT IT EITHER WAY.

    I love this recipe. Here's a little tip: spray the non stick stuff for your baking pan over the sink. I've slipped after some overspray landed on the floor; we don't need you taking a tumble. Thank you for your recipes & joyous energy!

    This is how my MawMaw used to make it except she added boiled eggs into it. I'm definitely making this for a second year in a row. I typically skip a few years. I just miss my MawMaw and make her dishes when I am missing her. Thanksgiving is the time of year I start missing her the most.

    It must be a Louisiana thing. I am from Louisiana and we have always had chicken in our dressing. I always tell my kids Thank God I’m from Louisiana for the food we cook and eat. All the spices and heat and flavor we put in dishes. I always say I eat to taste. Thank God for my Cajun momma God rest her soul….keep on sharing the love of food Amy and the flavor….Gos bless you!

    I watched this video last year, but had to watch it again before the holidays get here. I will be trying your recipe out this year. Each year I always make mine without a recipe and It never comes out the same…you know how it is…each year it changes just a little because I think Oh I’ll add a little bit of this…that’ll be good. I need to get back to the basic I’m sure it’s going to be delicious.

    Looks good! I make my grandmas dressing every year with white bread & sausage, celery & onions, poultry seasoning & sage, eggs & broth & tons of butter!!!! Okay I have same problem of talking & loosing count of measuring so now I always make separate piles of measured amounts (cups/teaspoons etc)in my mixing bowl so I can see what I did! Crazy but it works bc I'm either talking or grandkids are distracting me! Ha

    Yep, Amy... our dressing is almost the exact same. I really love watching people make dressing.... probably because it can easily take over the entire kitchen. I made a "recipe" dressing last year for Thanksgiving (no idea why)... but my mother in law told me, a couple of weeks ago, that I had better get back to the original dressing this year. She said, please, please don't make that stuff you made last year. You do a great job with all of your recipes, you're a joy to watch, and you're hilarious! Keep doing you!     I wish I would have known this before I grew to the age of 87 years or I would have done the same thing as you by making/freezing ahead of time! So, you young mothers out there, please, please do this before the holidays to make them even more enjoyable for your whole family 🤗🤗🤗

    You remind me of my dear friend who was originally from Louisiana. She moved to Oklahoma where I live when we were in the 8th grade and we've been good friends ever since (we are both in our late 60s now). She still has her accent. Thank you for this recipe. My folks never made it this way but I had been looking for a recipe that combined the dressing with the chicken. Normally, I make my dressing with left over yeast rolls and cornbread and I put sage and homemade poultry seasoning in it along with the onions and celery, eggs and stock. I've never tried putting the canned soup in it but I can see where that would help keep the dressing moist. It is interesting to see how people from different areas make their dressing. My husband is from New York state and his folks didn't even know what cornbread was until I came along. The first time I met my mother-in-law she served me fish soup (they lived very close to Lake Erie). The only fish I ever ate was battered and fried. I took a look at that fish floating in that broth and I just laid my napkin over it and said a prayer over it. I just couldn't bring myself to eating it.

      Oh my goodness I laughed out loud about fish being bettered and fried!😅😅 I know girl. That is the the best way to us. But yes so many others enjoy it in soups. I would have tried it but it would have been hard. I was picturing that fish floating myself when I read that😅😊💜

      Yes girl I bet this dressing is very similar to your turkey dressing. I'm missing you too. I have had laryngitis for 5 days now. You know this is killing me not to be able to talk😄💜💐🌸🌼ill be back soon though. Oh and my laptop crashed that I edit videos on. Sometimes that old devil is on our backs isn't he!! He better get on out of here😄🙂 we got visiting to do!!!

    My Louisiana family recipe is similar to this with the chicken and broth but no soup. We just use milk, broth and lots of eggs! As a new WW2 bride my mom asked her mother-in-law how many eggs to use. Her reply, "As many as you can spare".

    I have a bowl like this one here, it is a 35 quart stainless steel mixing bowl, you can get it online at Walmart for $20. If you ate cooking for a large bunch of people, this big bowl is fantastic for that!

    I have never put soup in the dressing before but I think I will try this year. All the other ingredients are similar. My mother used to put left over turkey in a can of cream of chicken and a can of cream of celery soup over rice as a meal after Thanksgiving but we never used soup in the dressing. Probably because way back in my great- grandma's day they did not have it. The recipe came from my grandma. Not really a recipe but some of this and that til it is right! I am almost 72 so a recipe going way back.

      Oh Amy, I made this yesterday well actually it took me two days,lol. I bought a rotisserie herb chicken, sauted the onions,celery, gr. peppers for the dressing, used boxed chicken stock. I baked it then cut up single servings and froze them. IT IS DELICIOUS ❤.

    I am so happy that I ran across your chicken dressing recipe I was just going to put the chicken on top of my dressing because I live alone and I figured that would be enough for me but yours looks so delicious I am going to do not to like you did but I am going to do just the one and I just can’t wait to do it and that’s going to be for my Christmas dinner with of course some cranberry sauce on the side thank you so much

    My favorite dish on Thanksgiving ☺️ I love a lot of black pepper in my dressing. I've never put boiled eggs in mine, but I've seen lots who do.
