  • Today I am making a small batch of green chile chicken tamales for dinner. You can triple the recipe for a larger batch and use your favorite store-bought green salsa, to make it an easier recipe. This is gonna be good!

    INGREDIENTS
    2 1/2 cups masa harina
    1 tsp salt
    1 tsp baking powder
    1/2 cup lard
    2 to 2 1/2 cups chicken broth
    1 to 1/12 lbs cooked shredded chicken
    24 to 26 prepped corn husks
    *extra corn husks for the steamer pot
    FOR THE SALSA
    11 oz tomatillos
    2 to 3 large jalapeños
    3 to 4 cloves garlic
    1 large onion
    1 1/2 tsp chicken bouillon powder
    1/3 cup chicken broth
    salt to taste

    This lady can cook everyone, I followed and made many of her recipes. Her pork tamales turned out fantastic! Will try this chicken one this weekend!

    The first time I made tamales I had a huge pork butt a big beef roast and ten pounds of chicken. I bought the already made huge bag of massa at the Mexican store. Eventually I ran out of the ingredients but still seemed to have a ton of husks left. Lesson learned only prepare as many husks as you plan to use lol. I must have made at least 100 (there’s only two of us) I had them coming out of my ears. Lol

      I like to put my extra husks in a freezer bag and freeze them til next time!

    My arms are sore from chopping the pig head meat, and spreading yesterday. You make it look easy. We had 3spreaders and 1.5 filling. Big work for the holidays. All made with love and laughter 🥰

      Use the tortillara to fill husk put plastic corn husk Masa plastic press it all same thickness feel with meat or cheese roll

    Yours look so delicious and you made it simple. I make a more spreadable masa by fluffing the lard with the hand mixer first and I add more liquid and mix with the hand mixer until fluffy and easy to spread with a spoon. It took me a very long time to learn my mother's way of making them and they come out just as delicious. Thanks ,you are a great cook!!

    a few years ago found out last minute my wife's best friend mom would also be joining us xmas eve she's a vegetarian so had some pepper jack cheese in the fridge shredded it and put it in a few tamales for her ran out of them everyone wanted more :) love your videos and hope you have a wonderful Christmas :)

    FOOD PORN here my dear Simply Mamá, ah the finest tamal at the end....had me drooling, you're also of the same mind as us, store bought tamales are good but they're more masa and less meat,cheese, although they do use copious amount of red or green chili sauce.     Excellent job showing a undone versus done tamale, they really do just slip off when done. I use the foil squares when I do tamales and the same thing will happen, a done tamale will just slip off. If sticking, cooking a bit longer. Love that pot, same one that I have.

    Anyone who doesn't like your green salsa can go invent their own. I've made your salsa several times and it is perfect. I hate comments like "can I substitute rice flour for this cornbread recipe".

    We can’t really grow tomatillo here out growing season is too short, but because it’s a short growing season I often end up with lots of green tomatoes… so I make my salsa verde with them. It’s close in flavour to tomatillo salsa but not the same. Works well.

    Your post was MUCH simpler than others
    Other channels said I had to whip my shortening with a mixer for 45 minutes
    Others say add I’ve cubes
    Others say to melt the shortening
    I was totally confused. But I’m going to go with yours. Thanks again

    Thanks for your videos, they are great. I hope that you can find some New Mexico Hatch green chilis and make Hatch green chili, chicken, & cheese tamales. They are the best! ( I might be saying that because I have lived in New Mexico since 1999 and gotten spoiled on WONDERFUL Hatch chilis! 😁😂😁😂😍🥰)

    Using green cubanelles will work for good consistency and flavor if you don't like tomatillos.

    Interesting. I hadn't enjoyed tamales, because I've only seen a very little filling ratio, avoided since. If I don't try my own, I'll definitely pose question, and be at least willing to try .
