  • Today, I will show you an easy way to achieve tender savory chicken tamales. Making tamales is always a labor of love. There are many steps and it takes hours of time, but bringing the family together is worth it. Some make tamales to share and celebrate the holidays with family and friends. Some sell tamales to support their livelihood. With that said, this recipe can be doubled, tripled, and quadrupled should you need to make a large amount. I am more than sure there are hundreds of ways to make tamales and everyone has a family recipe. This is just a simple way to make them. I tried to simplify it for the beginner cook or those who want to easily make tamales at home.

    INGREDIENTS
    50 cleaned & softened corn husks
    2 1/2 to 3 lbs prepped chicken
    prepped masa
    16-quart steamer pot
    2 liters of water for the bottom of the steamer pot
    Chicken
    5 lbs boneless chicken breast or thighs
    4 1 /2 cups water
    2 Tbsp chicken bouillon powder
    2 tsp onion powder
    2 tsp garlic powder
    1 1/2 tsp ground cumin
    1 tsp black pepper
    10 to 12 dried guajillo chiles (stems and seeds removed)
    8-quart Slow Cooker
    (cook on high for 4 to 4 1/2 hours)
    Masa
    4 1/2 to 5 cups (1 L to 1.2 L ) broth
    1/3 cup chile puree
    4 cups instant corn flour (I used Maseca brand)
    2 1/2 tsp salt
    2 1/2 tsp baking powder
    8 oz (227 g) lard or shortening
    16-quart steamer pot
    Puree
    12 prepped & softened guajillos
    1 1/2 cups broth
    Meat Filling
    2 Tbsp cooking oil
    1 cup or more of chile puree
    3 lbs shredded cooked meat
    salt and season to taste

    Thank you so much!!!! I finally did it!!! I am 61 and made my first ever tamales...I was so proud!!! You are such a joy and inspiration to me!!! I live with Mom after Dad died and use your recipes....she always compliments my cooking...love you from Texas!

    I used your recipe to make a small batch of pork tamales and steamed them in the Instant Pot. They were amazing for my first try! Thank you!

    31 May 2024 @SimplyMamaCooks As you know, I cooked a small batch of this recipe last weekend. Had to complete all the little steps slowly over 2 1/2 days because I don’t have any family members to help and can’t stand on my feet too many hours due to being a viejita. I must emphasize that the flavor profile in the chili puree is the absolute best. Reserving enough if that puree and mixing it with the masa makes the masa almost stand on its’ own for flavor. It’s so good, it makes a person feel like smashing every tiny masa crumb on the emptying dinner plate, with the back of a fork, together to continue savor every “drop and crumb” of the luscious tamales. You are such a great home chef and virtual culinary instructor, over the past 7+ years, you really changed my life in the kitchen. For all that, I’m forever grateful.     I bought your cookbook and I was just looking at this recipe. My neighbor used to make them for Christmas and would make some for us but we just got stationed at new place and now I’m gonna give it a try and watching you make them makes me think I can make them…who knows I may just make some for my hubbies new command 😬

    I make tamale every year during Christmas. I would defiantly recommend using lard. I mean they will still be delicious otherwise, but just not as delicious lol. The best leftovers too because you can just throw them into the microwave from frozen with a small sprinkle of kosher salt. I'd also recommend pan frying one so good!

    I hope you have time to share the sweet tamales that my good friend in Utah use to make me every Christmas!!! I would love to make them in honor of her!!! She passed away several years ago!!! Thank you for sharing your recipe with us!!! I love chicken tamales!!! God Bless Us All!!!

    My FAVORITE Mexican food!!! They bring back memories of visiting family in Indiana, back in the late 50's. You could get them from a bicycle cart. Wonderful..Thanks you for the recipe. I would make the beef ones for my late husband. I have kidney disease and don't eat beef anymore. This is PERFECT❤❤❤

    the best tamales i've ever had was a friends mom who made homemade pork tamales from the pigs head, jaw, etc they raised on a farm. they made everything from scratch. still haven't found anything close. this looks pretty close to how they made them. i agree though. chicken thighs are so much juicier and easier to cook with than chicken breast.

    Yeah!!! I love your videos and your candid honesty. My Mom would be cheering you on all the way. She was a hard worker and an excellent cook. But she worked way too hard with great discipline. She wanted women to enjoy more and work less. She believed you would still put all your Love into it you just did not need to drain yourself all at once I wished she had learned this younger I might have had her here past age 63. I miss her smart & loving advice every day! It is women like You that will help us to live a longer life. Which is the goal for us & our families!!! I love your smart short cuts they are not lazy…. They save time & lives lol!!!!

    Wow! This is the best tamale making video ever. Years ago, I learned to make tamales from my friend's "aunties". I made them several times right after, but haven't made them in quite awhile so I was looking for a refresher. This was almost exactly how I learned to make them, chile liquid and all. Thank you so much for your clear, detailed instructions and excellent demonstrations. Your book sounds great, too, so will give that a try, too! You are a fine teacher!

    Hey there simply mama....I wanted to thank you...I made this recipe and followed it to a T except I used thigh meat and for some reason don't ask me why I threw a full pinch of sugar in the masa....anyway it came out great and I have to say you totally helped me in my confidence in making tamales.     Hello! Love this channel! Do you have any advice on how to keep the water in the pot? Sometimes I put a coin on the bottom of the kettle but it's easy to miss when the music is playing!

    Great! I have your book and I will use the dark meat too. Have you made a cheese and chili only (like an anaheim or pablano)? I had them once in AZ and would love to see them made. I imagine I would make it basically the same?

    I live in Spain. Do you know what a good substitute for guajillo Chile's might be? My grocery store carries some canned Mexican goods abd I don't know if there is a similar Chile in the produce area.

    Using a tortilla fresh instead of with your hands it's a lot quicker like 60 to 70% easier and faster I'm glad to see you got a Vitamix

    I mill my own corn for polenta and grits. I wonder if it would work for tamales? I may do a very small trial amount this weekend when I make tamales. I’m thinking I will tie them up differently for identification purposes. It can’t hurt to try making a few right 😅
