  • These are the best chicken tamales you will ever eat. In this recipe Im teaching you how to make them. The masa is so soft and flavorful and put together with the green sauce adds even more flavor and a slight kick of heat to make the perfect combination. Even though the recipe is a bit long, it is not complicated to make and the outcome is sure worth the wait. This is just another example of how rich our Mexican food culture is and I am so proud to share it with you. Get ready to fall in love at first taste!

    Green Chile chicken tamales
    Makes: 26 TAMALES
    For the chicken
    Chicken breast, bone in 2 lbs
    Salt 1 1/2 tsp
    Water 10 cups
    White onion, small 1 ea
    * Reserve chicken broth will need approximately 4 1/2 cups of it
    For the salsa
    Tomatillos, medium 8ea or (1lb 2oz)
    Jalapeños, medium 4 ea or (5oz)
    Cloves, whole 2 ea
    Cumin, whole 1/4 tsp
    Black pepper, whole 5 ea
    Garlic, cloves 2 ea
    Cilantro, fresh Small bunch (31g)
    Canola oil 2 TBSP
    Salt 1 1/2 tsp
    *Add 1/4 cup of water to the blender to get the last bit of Chile
    For the masa
    Masa 5 cups or (1lb 6oz)
    Baking powder 1/4 tsp
    Lard 1 cup or (8oz)
    Canola oil 1/4 cup
    Salt 1 1/4 tsp

    Not to be disrespectful but, 1:34 I always laugh at recipes that say "cover them with enough water ..." when they ACTUALLY float..you can't COVER something that floats...so do you need to just add enough water to keep them off the bottom of the pot?

    First off, your videos are the best on you tube for authentic Mexican food. They are clear concise and unlike most other videos on you tube, they are specific to what you are cooking. You don't try to chat or make the video about you.

    I've been making tamales for almost 50 years. I loved your masa. I would of added a little more ingredientes to make it more flavorful but I could tell the texture was on point. It didn't stick to your hands and it didn't stick to the bowel. Indicación that it wasn't going to stick to the husk. Good job.

    I just finished steaming them today for dinner! The recipe was pretty easy to understand and everything was simple to make (except for the wrapping, but it was my first type wrapping them so that’s understandable). I don’t really care for tamales personally but I made them for my mom and brother who really like tamales and they love them. My brother is pretty picky about food but he loved these so i say it works! Although I wrap the tamales and steam them right before eating instead of steaming them all at once because we have a small steamer that only fits about 4, and I think it works better than reheating the tamales in a microwave later on.

    Hello 👋 Rosana! I hope you are doing well. I want to make your recipe for red pork tamales, but can I use your recipe for the masa for the tamales like the one that you use here? I only ask, because I think that your old recipe for red pork tamales uses a (lard/crisco) based recipe for the masa. If I can use this masa recipe, can I use regular vegetable oil instead of avacado oil? Thank 😊 you so much for your help! 🥰☺️😋❤🎉❤I only trust learning from you, because your heart is truly in it!!     Having just watched this video and, immediately prior, your video for pork tamales, my wife and I both noted a couple of slight differences. Method of making the masa as far as manteca and oil preparation and addition is concerned. Amount of masa used in the mix. Any particular reason for the differences? Either one work better than the other? Also noted the lack of covering the chicken tamales with corn husks and plastic bag.

    I’ve seen some recipes where they say you have to soak the husks for an hour or more. Do you need to do that so they’re pliable or can you just rinse them like you’ve shown here? It looks amazing and I’m going to try this out today!

    I like making a tomatillo sauces. I love it on enchiladas (cheese, chicken/cheese or chicken). I prefer to roast them though with a little garlic, and a jalapeno (can't do a lot of spice anymore cause of an ulcer).

    Take magnesium capsules to three and a glass of water takes about 10 or 15 minutes you got the bathroom and be easy. Or make Green juice 🧃 it works as well

    I made another recipe last weekend and had the wrong flour, mine was corn masa flour. It never got quite right, but the taste was there. I love tamales.

    I do not own a vita mix, but use a cuisinart food processor, so the whole peppercorns and cloves will not grind into the sauce. How about I use a pinch or two of ground cloves and some peppercorns ground in my pepper mill ?

    yuppp my mom makes these types of tamales almost every month. My grandma passed this recipe only to my mom. It's my favorite and never tried any tamales after that. Of course, my grandma had a special ingredient to make it a family secret. My grandma made the chili a little bit different and the masa different but that made it special!

    My dad decided today that he wants tamales. Normally we would get them from my friend's mom (she's originally from Mexico and has several 'old family recipes) but due to a recent accident she can't cook right now (she's okay though, just in leg cast) so gonna be given these a try for both our families.

    Use olive oil over toxic canola oil. Research how unhealthy canola oil is! 😊

    Ik it was possible. That's the perfect amount of chile and salsa and massa. I swear every mexican around here sucks at making tamales. They put to much massa and not enough chile or chicken. I'm tired of it and making them my self. Thank you
