  • Here is one way I like to make chicken tamales. With the cooler weather in my area and the holiday season, it's the perfect time for tamale making. I love to give tamales as gifts or make a small batch for dinner. This recipe is simple and I think its a good place to start.
    INGREDIENTS
    MASA
6 cups Maseca (Regular or Tamal Mix)
6 cups of hot liquid/broth/water mixture
1/2 cup of melted lard or shortening
1 cup chile puree (or to your preference)
    salt to taste
*Be sure to keep extra hot water in case masa gets too dry
    MEAT FILLING
3 1/2 lbs to 4 lbs boneless skinless chicken thighs
1 tbls bouillon powder (or sub with just salt to taste)
    2 tsp garlic powder
    2 tsp onion powder
    1/2 tsp ground cumin
    1 bay leaf
    1 tsp black pepper
    1 medium onion
3 to 5 cloves of garlic
    4.5 quart Slow Cooker
    CHILE PUREE
1 1/2 ounce bag of dried Guajillo chiles
    2 /3 cup of water
    Blender
    MY OTHER TAMALE VIDEO
    • How to make Tamales | ...
NOTE: Cook time and amount of tamales vary. I made 3 dozen easily with some masa left over. It all depends on your preferred ratio of masa to meat filling and tamale size. I make mine on the thinner masa smaller tamale size.

Regarding the size of your tamales: As my Mom always says-- "If you criticize the cook, you just volunteered to do it next time."

I just made these today and they are TO DIE FOR! definitely the best. I didn’t have a sieve, but I managed to make it work- I just put a strainer over the measuring cup for the chicken drippings. And I didn’t have a big pot so I just used my biggest one, put foil over the tamales and let it steam that way- it took about 2 1/2 hours total.

I’ll bet they taste delicious. My sister is making tamales tonight for delivery tomorrow. She’s really good at it. At Christmas she’s made up to 300 dozen. Now she’s doing fancy ones, with cream cheese, jalapeño, bacon. She won a trophy for those. 👍

I just started watching your tutorials. I hope u feel better and I'm so glad the trolls did not discourage you to continue making tutorial videos. I really like your videos. My dad made all of these recipes and I miss him and the food brings back great memories, your cooking is similar to his, he was born in Mexico and became a chef in the United States, Thank you for taking the time to show how it's done! 😊

Thank you! I love making videos and I appreciate your kind words. I too miss my Dad in the kitchen. It's been 2 years since his passing and I think of him a lot when I cook. He was the biggest critic...lol! :)

I made these last night for the first time. I do have to say they're a labor intensive. A mistake I made was not taste testing the meat before I wrapped my tamales. All guajillo peppers are not the same. I anm using pepper sauce on these to spice them up a bit. But the recipe worked out fine. Now I can make my own chicken tamales. Thumbs up

Okay I typed in "how to make tamales chicken", your video was first and I am soooooo glad I clicked! My neighbor Anna Rosa used to make us tamales and I was hooked. After we moved my wife asked me what I wanted for my birthday one year and I said Anna Rosa's tamales, she ended up seeing her daughter at out local mall one day and mentioned that's what I wanted and her mom was so excited that that was what I wanted she ended up making me a whole batch!! Anyway I am going to try and make these myself, I loved your video, it is very detailed and also I like the tips you give about the masa. I will let you know how they turn out. Big thumbs up and subscribed!

Omg your videos make me wanna start cooking again. Ever since my mom passed 3 years ago I've been wanting to make tamales in her memory and your recipe is very similar to hers. Thank you.

    •  6 років тому +8

Oh gosh, sorry to hear about your Mom's passing. I am so glad you found a recipe similar to hers. After my Dad passed 2 1/2 years ago, I find myself wishing I could learn to make his smoked brisket. I am in the works to teach myself. I think the learning process will be a good way to remember him. Thank you for watching and leaving a nice comment. :)

Hey! I wanted to comment on your next video but comments are disabled. So I'll take this opportunity to tell you how awesome I think you are! Your recipes remind me of San Antonio which I had to move away from and miss so much. Living in northern CA leaves me wanting for this type of food and now I can cook it thanks to you! Feel better and keep being awesome.

I am making tamales this week and glad I found your video. I like your style and I like my tamales similar to yours (small tamales with thinly spread masa and finely shredded meat}. I am preparing the meat and sauces tonight for green chili chicken as well as pork with red chili sauce. I will make the dough and tamales tomorrow. Thank you for refresher course on cooking times. I always forget the amount of work involved because when you gotta have a tamale you just gotta have one!

I bought. Masa. Prepared already. 6lbs of it. And. I got. About 4 dozen. With a little bit of mass left over. I had no idea. What to do with it. I made my tamales Verde con pollo. Oh yes I made some with cheese some with cream cheese. I cooked on low heat 65 minutes. I vote for masa that comes in a bag masa mix it has better flavor. Thank you for your recipe..

This is a great recipe. This is how I make mine but I make pork tamales and queso con jalapeño. I can’t wait to make mine in a few weeks. ❤️
