Easy Instant Pot Mushroom Risotto/ The Starch Solution

- Easy instant pot mushroom risotto is what I will be sharing with you today.
I love risotto but it can be very labor intensive. This instant pot mushroom risotto is so easy. The instant pot does all the work. This recipe is also Starch Solution compliant, so no oil in this recipe. To make this the perfect 50/50 plate I will be serving this with fresh asparagus.
Here is what you will need for this easy instant pot mushroom risotto:
1/2 cup chopped onion
1 tsp. minced garlic
1 10 oz. package sliced crimini mushrooms
1/4 cup veggie broth (or white wine)
2 cups Arborio rice (no substitutions)
4 1/2 cup veggie broth
water for sauteing.
Set Instant pot to saute function, and add1/4 cup water when hot add onion, saute for 2 minutes, then add garlic and saute for 2 minutes add a bit of water if you need to so garlic does not burn, then add mushrooms and saute for 4-5 minutes until mushrooms cook down and release liquid. Turn off saute function. Add 1/4 cup of veggie broth or white wine to de glaze pan for 1 minute, then add rice and mix well, then add 4 1/2 cups veggie broth, stir and set Instant pot to manual for 6 minutes making sure it is on sealing. when time is up quick release and fluff rice and serve with green veggies.

Oops, I can't stop adding comments. Cooking doesn't come easy to me, but I've gotten better. The more ingredients a recipe has, the less likely I am to attempt it. This one is short and sweet, so I'll definitely attempt it.

Love my tupperware cooker, strainer! I don't have the 70's one, but it is Tupperware from the early 90's. It is a very used piece in my home.

I do remember Tupperware parties it as me and my friends main source of socializing. I do not remember that cool steamer of course I never had a microwave because it was before they made microwaves lol

Too funny! I have the exact steamer! And no I don’t remember that one from the 70s but I’ve always used microwaveable steamers vs the stove top. I make ‘perfect’ rice in any flat microwaveable container like the bottom of this steamer. I take the steamer part (with holes) out and put 2 cups or so of rice into the bottom. Then I rinse it a few times and fill with fresh water to a level ONE KNUCKLE above the rice. For white rice I put it on high for 7 minutes then 17 minutes on medium. For brown or mixed wild rice (Lundberg) I add usually one minute to each - 8 & 18. Rarely….. If it’s not done I add another minute on medium. (PS I bought the steamer at a thrift store. It looked brand new.) One time I was out of town and my husband wanted rice. He was used to making rice in our previous containers so put the rice in to cook and couldn’t figure out why it was hard and didn’t cook right. I later determined that he had left the steamer tray in because I found pieces of hard rice stuck in the holes! Hahahaha. Thanks for your videos. I’ve just found you but have subscribed!

Risotto! I'm looking forward to trying this. I've never had risotto before, or the rice you're using. Perfect to have the asparagus with it - yum! Thank you Debi ~ I really don't recall that steamer, even though we're in the same age bracket. But then again, we didn't get our first microwave until the early 80s, so maybe that had something to do with it. And it was almost the size of a console TV! Those things were huge....and expensive!

The mushrooms were not frozen. I bought them at Trader Joe's. But any mushrooms will do.

I love mushroom risotto. I know it's not compliant with Dr. McDougall's advice but in this case I add some homemade cashew parmesan to attain the typical creamy mouthfeel.
You could also add some plant based cheese sauce. I've done that before and it's pretty good.

I just have one question...when the timer is done do you release the the steam right away?
Yes, you do a quick release.
It's a shame I can't eat mushrooms, what would you suggest I could swap them with any time they are part of a recipe. I know they are nutritionally important. A valid substition in terms of nutrition would be so fine for me. Thanks Debbie for helping me out.
You are so welcome and yes you can sub any veggie you want. Sometimes I do asparagus or peas. Really anything will work. Just make sure it is around 8-10 ounces.
