I am Italian and you have done the risotto recipe correctly, as we do in Italy. However, the final texture should be much creamier, and not as sticky as yours. To fix it I would have simply added another ladle of broth at the end without letting it evaporate. We say that the consistency of the risotto must be "all'onda" (I know, we are obsessed with these things.. "al dente", "all'onda" etc. 😂). "Onda" means "wave", so when the risotto is ready, if you move the pan with a sharp blow, the risotto creates a kind of wave on the surface, so it must not be too watery or too compact, but something in the middle. Finally, another thing an Italian would never do is use all that garlic, especially if you want to seduce someone and you don't want your breath to stink 🤣. For the rest, it's "perfetto" **italian chef’s kiss** 😆

Yeah, that pan would have been a serving for one. My grandparents used to take us mushroom and berry picking on some property our family owned when I was little and to this day I love mushrooms.

My Italian friend taught me that at least in Rimini, they toast the rice in a separate pan before they add it to the leek/shallot/garlic, until it picks up a teensy bit of color. It makes the rice taste more nutty, and it cooks a little bit faster.
OMG! DE-li-scious! I don't love leeks so I used onion and I used my homemade vegetable broth instead of store bought. Find me someone who could tell this is vegan. That miso butter is perfect to add umami to the dish. I am so happy I found you. Let me know if you want photo shares where to do that.
I made this yesterday and it was so good. I sadly never had Miso paste before so I didn't knew how it tastes. And no supermarket in my area sold this. But I read that it has a strong umami flavor, that's why I replaced it with some soy sauce. Can't wait to try it with real Miso paste in the future.
Oh. My. Goodness. I found some fiddlehead ferns in the forest and knew I wanted to do something special with them. I sautéed them with with mushrooms, and also added a little bit of nutritional yeast at the end instead of parmesan. Amazing recipe, thank you for sharing!

I have nothing against making risotto on the stovetop.It's actually quite soothing, all the stirring and such...but I usually make an Instant Pot version for a weeknight meal (gotta use those stray veggies before they go bad). Anywho, this recipe looks delicious!
I simmer the leek tops (along with a great big fist of shredded romaine and some fresh peas) in my split pea soup. I fish out the leeks at the end. Also, keep little mason jars of wine in the freezer (this is what I do with the “bottom of the bottle” wine. It’s great for cooking.
