If we use water instead of broth, will that change the mentioned ratio 1:2 for arborio to liquid? I prefer using pure water, but my risotto gets kind of sticky instead of creamy, even though I put a little bit less water than 2 cups, cook it for 6 minutes in the multicooker with natural release, and in the end it is still like overboiled.
arborio is meant to be sticky. One thing I recommend if you want a super creamy risotto like the stove-top cooked type, cook it regular in the pot 1:2 ratio and then open the lid and THEN add another 1/2 cup broth or water to make it creamier.
Washing your mushrooms before slicing them does not make them soggy. They lose all their moisture when cooking. I saute mine in the garlic & onion and then cook them with the risotto rice for better flavor.
