Instant Pot Mushroom Risotto -- Super Simple and Delicious

Jill’s Mushroom Risotto - an Instant Pot Recipe

1 cup Arborio Rice
2 cups broth or water. I used chicken stock (Better than Bouillon)
¼ cup white wine (broth or water can be substituted in you do not wish to use wine)
5 oz. sliced mushrooms
2 small carrots, chopped
¼ cup chopped onions
½ cup frozen peas (that have been defrosted)
Ground Black Pepper to taste
1 tablespoon olive oil
Approximately ½ cup grated Parmesan cheese
Heat olive oil on the saute mode of your pressure cooker. Add mushroom, carrots, and onions. Saute until mushrooms begin to soften and onions become translucent.
Add rice, stir to combine and be coated by the olive oil.
Add white wine to deglaze the pan.
Add the broth to the pot.
Turn off the Saute mode. Turn on the Manual mode. Set cook time for 7 minutes.
Once the cooking time ends, let the pot do a slow release for 10 minutes, then finish with a quick release.
Open the pot and give the rice a really good stir. The rice will begin to get creamy and smooth. Add the peas. Stir to incorporate.
Add the cheese and stir into rice mixture. I ended up using ½ cup. You can add as little or as much as you like. We like it cheesy!
Salt to taste at this point.
Top with additional black pepper if you like, and cheese. Enjoy

Risotto in the IP is the only way to go. I've done the standing at the stove stirring and adding broth, then stirring more. Ugh! The add on ingredients are good

Noosh works well. You could also use a cheese alternative parm. There are some good ones on the market
Another dish that looks delicious. And in the instant pot…can’t beat that! Do you usually eat this as a main dish or as a side? As a side, what do you like to pair it with?
Hi Debbie, this could actually be served as a main course, with a nice salad on the side. There are a number of risotto recipes that include chicken (pre-cooked). Randy once had risotto in a restaurant and they added duck comfit. Delicious! But, if you use it as a side, which we normally do, we have a nice piece of grilled meat or fish. A veggie too, and you've got a very stylish dinner!
Is there anything I could substitute for the wine? It's my understanding wine gets filtered through fish bladders so I would like to avoid that.
You could certainly sub out more veggie broth or water. That would work good
I don't have one of those cookers, so how long on the stove top?
You'll need to look at the alternate method of cooking risotto. You have to add small amounts of your broth to the rice and stir it until the broth is absorbed into the rice, then add more broth, and continue this process until you've used all the broth. It usually takes around 30 minute
