Bread flour 高筋面粉 300g / 2,1/8cup
Dark brown sugar 紅糖 50g / 1/4cup
Sea salt 海鹽 2.5g / 1/2tsp
Whole egg 全蛋 1(55g+- per egg)
Lukewarm milk 溫鮮奶 150ml+-
Instant coffee 即溶咖啡 10g / 2Tbsp
Instant yeast 即溶酵母 3g / 1tsp
Unsalted butter 無鹽奶油 30g / 1/8cup
Oven dish 陶盤 28x6x20cm
摄氏180 / 华氏356 烘烤 12-15分钟
Bake at 180°C / 356°F for 12-15minutes

I baked this beautiful bread today. My kitchen smelled so good 😍 The bread was super soft but the coffee flavor was a bit strong. I top it with condensed milk and it tasted so yummy! I love it! TY Apron! 💖
Apron recipe is the best. I have tried several recipes if his and turned out great. I used the dough setting of my bread maker, then shape the dough into buns and rise for 1 hr and bake. So easy.

So I made this and it turned out AMAZING!!
here's my tips:
-so i tried to divide this recipe in half (including yeast) for only 6 buns, but i ended up having to proof it for over 3.5 hours before my dough doubled in size. it's probably because of the little amount of yeast i put in it (since i divided the recipe in half, i only put 1/2 tsp yeast which was NOT a good idea). so you really shouldn't halve the recipe unless your down to wait 3.5 hours for the dough
-did 60g dark brown sugar and it worked PERFECTLY it was sweet, but still had the coffee flavor. 100% would recommend
-even though i divided recipe in half, i used 1 egg, and it worked fine (i just had to knead for around 25 min by hand).
-baked mine for 15 min. (i hv conventional oven)
-ik it sounds weird, but i ran out of milk the day before i did this so i subbed in half and half (1:1 ratio). it worked.
-it's best eaten immediately, it's no longer soft after a while (like a few hours). it's still delicious, but it got a lot harder
Always fun looking for alternatives when you start making something, not so much fun when 3 items need subbed
So you divided the recipe in half but for the brown sugar you didn't? That mean for the original recipe I should add about 100 -120 gr sugar if I want it to be sweet?
@@ngochien4704 probably. Idk this just worked for me. Maybe try like 85g? Unless u rlly like sweet things
I always freeze my bun and microwave it when needed. It is like freshly baked.

I'm adding this comment because many ask about why these buns don't stay soft after a day, despite being so after baking.
The reasons are 2:
First is the molasses in the dark brown sugar. It's VERY acidic and turns the sugar into crystals with the heat. While the buns are warm, they're soft and pliable, and the moisture is distributed into the surrounding bread.
2. However, there's not much fat in the recipe, or any way for the bread to retain any moisture, think a fig Newton. So as soon as the bread is cool it stiffens.
I'm pretty sure though, that if you were to place it on a half cookie sheet in an oven with a steaming bake-proof dish full of hot water to warm up, it'd be nice and soft again. I haven't tried it, but I've made sweet bread with dark brown raw sugar and this is how we bring it back from "stale".
