高筋面粉 bread flour 230g / 1,2/3cup
细砂糖 sugar 25g / 3Tbsp
盐 salt 2.5g / 1/2tsp
即溶酵母 instant yeast 2.5g / 3/4tsp
全蛋 whole egg 1(50g+- per egg)
鮮奶 fresh milk 100ml+-
無鹽奶油 unsalted butter 20g / 1.5Tbsp
圆模 Pan Size 19cm
摄氏180 / 华氏356 烘烤 15-17分钟
Bake at 180°C / 356°F for 15-17minutes

I made this ! I could not believe it! We can actually bake a bread with one proofing! Omg! It’s so amazing. I thank the author for doing this and sharing to us. I can’t be more grateful. It’s saves so much time. And the bread still remains soft till the next day. I was quite skeptical about the soft texture and doubt it could last for even a day. But yes! This receipe does keep the bread soft after a day.
I was always wondering why 2 or 3 proofing required whenever yeast is used? After a lots of search on UA-cam I came across this recipe. I tried it today and instead of dinner rolls I made bread loaf. It came out fantastically well. Today, I made best bread ever. It was so soft, and it risen so much I had never experienced before.

Amitava Dasgupta can we use all purpose flour or what type of flour do u use? Thanks
Viet Thao yes. Might not rise as evenly and the texture will be slightly different but all purpose can always be substituted in a pinch. I prefer bread flour for bread.
In a 2 proofing required recipe, the first proof will give your bread the flavor and the dough become more elastic, then the second one makes your bread fluffy

今天中午开始做,现在开吃了!真的没有想到这个面包真的很松软!我的糖是粗糖,我放了2tbsp。用新买的电动搅拌器搅拌。牛奶先弄温热(40度左右),化开酵母。牛奶减少大概60ml左右,因为这里很潮湿。很开心成功了!而且很好吃!谢谢你的食谱!

I have question on why we generally need 2times of proofing while 1time here generates a great result?

I tried making it. Didn't look as good or fluffy...I think my pan was a bit too big so it had trouble proofing but this recipe was nice and easy. Overall from prepping to baking to washing, it took 2hrs. Compared with other bread recipes, this was short. Thank you.

@@maluspin6068 en algunas ocasiones le paso leche con una brochita. Otras leche y queso, clara huevo y semillas. O cuando sale del horno un poquito de mantequilla con brocha!! Pero sin nada queda muyyyy bien!

Thanks for the recipe! I’ve tried and it’s super easy to follow and the one time proofing does save lots of time! If I’d to add coffee flavour into this one, for the 100ml milk there, can I have 100ml of milk coffee (espresso with milk with a total of 100ml)?

The second rising, or proofing, gives a better volume, a more mellow yeast flavor and a finer texture to breads.
Therefore I believe that if one prove the second time as usual with this recipe, he/she would have an even better result.
But I would definitely try out this recipe tomorrow. Who doesn't like a shortcut once in a while? 😊 Thank you!

I have tried this receipe by other chef before.
1) it tasted slightly more yeasty
2) not that flavorful tho
Most importantly, it turns hard faster. The normal bread I made stays soft for a couple of days. This doesn’t.
But, of cos if bread is consumed within the same day, then it’s fine cos it’s a time saving receipe

I tried it today, the bread is soooo good. A bit dense but really good. I think that's probably the reason why you have to proof twice to get light and more fluffy bread.
