Hey guys, in this video I demonstrate how to sharpen a ZT with a Wicked Edge Generation 3 Pro Sharpener. I also talk about some tips that knife makers can use to have success with this system. If any knife makers out there want to see a demonstration of how to sharpen your specific knife, send me a message and I'll see about making a video for you.
Tips:
1. Start with a wider angle. It's much easier to re-profile to a more acute edge once you've got a bevel established on the blade.
2. Use a marker and make sure your stone is reaching the apex, before you start grinding with a coarser stone
3. Always make sure to find the burr, also known as the wire edge.
4. Keep your stone flat against the edge for the entire stroke

I have this exact same system bar the tension lever. I love it.
I find I get better results if I sharpen where the tip points towards me: this creates micro teeth that have more of a bite when you pull the knife.
Apart from that I do it the exact same way you demonstrated it.
So you flip it around never heard of this!! I guess it would work tho
I would not like the point facing me for safety reasons. I would be afraid of accidentally stabbing myself.
Looks like you can really blunt the tip on a very sharp pointy knife like a Kershaw Leek.
How can you prevent that from happening?
When you are flying off the edge near the tip will that not round the tip doing it that way?
J Rod No, just the opposite. Following through with the stroke will keep the tip straight. The trick is to not let the stones curl when they come off the tip of the blade.

I’ve seen a few videos for the wicked edge but they are all on small knives. How would it work on a bigger or longer kitchen knife. How do you work it then.

It is arrogant and outrageous that, after marketing its product as the best sharpening product in the world at a price that is SO much higher than its competitors, you have the gall to suggest we should - under ANY circumstances - buy another tool with a motor to achieve a satisfactory result.
Great video Kyle! I am trying to decide between the gen 3 pro and the pro pack 3. Are these two models designed for different end users? They both seem very similar with the cam locking system and the ability to take the same accessories. I think I would be happy with either one but I'd like to hear your recommendations. Thanks!!!
So after working the burr up on both sides, then you just sharpen normally?
John Kennedy that’s what I do. I know some people continue to draw and check for the burr throughout the sharpening process and I don’t think there’s a harm in doing it that way.
Where did you get that base that your Wicked edge is sitting on?
Jason Todd that’s a Wicked Edge Generation 3 Pro sharpener. That model comes with the cabinet/base with the stone rest on the back side.

dangit dangit dangit.... Had absolutely zero plans of spending 1K on a knife sharpener today... of all things... oof.
Kyle, how do you sharpen a knife with only one bevel--in other words, only designed to be sharpened from one side? Especially if the knife blade is painted? I mean, you need to control the feathered edge on the unbeveled side, without scarring the paint. And the machine doesn't allow a "zero" degree edge. I suppose you just be careful not to be aggressive on the "unsharpened" side and put the angle at the minimum angle.
fcpelletier you would just sharpen the beveled side normally and then use leather strops at 15 degrees on the non-beveled side to knock of the burr.
is that Anoying noise the sharpener makes normal?
You don't put anything on the blade (tape?... ) to protect the blade from scratches from the clamp?
Eric Faden sometimes I do. If I think the knife has any wiggle room in the vise before I get going I’ll take it out and put some painter’s tape on it. I also tape all painted blades.
Well at 1200 a copy he probably doesn't worry about scratching his 300 dollar knife

@@benjarnigan1657 Lol, yeah KME and Edge Pro do just as good as the WE, it's more about the stones than anything. The KME diamond lapping films are nice too, I use them on my edge pro instead of stropping and they get the edge hair splittin sharp

Does it do an 8 inch chef's knife I've only seen them do folders
