Chinese Sausage w/ Snow Peas Recipe

    Sausage stir fry with snow peas - it is one of the staple recipes for Chinese people. I am using Cantonese sausage but you can use almost any sausage that you have. It is so quick, easy, and delicious. The sausage is very intense. And the snow peas are slightly sweet. They balance each other perfectly.

    INGREDIENTS
    - half pound of Chinese sausage (Can be switched with any sausage you like)
    - half pound of snow peas
    - Few cloves of garlic
    - 2 pieces of the white part of spring onion
    - Some shredded ginger
    - 2 red chilies, sliced thinly
    - 1/4 tsp of salt or to taste
    - some white pepper
    - 1 tbsp of soy sauce [Pearl River Bridge Natural Brewed Light Soy Sauce: geni.us/wABlLXf]
    INSTRUCTION
    - Slice some sausage into 1/4 of an inch thick pieces. You can use almost any sausage that you have.
    - Wash the snow peas and remove the fiber that is on the side of the snow peas. It is annoying to eat if you leave it on. If you don’t have snow peas, you can use any vegetables you like such as mushroom, bean sprout, lotus root.
    - Besides that, you will also need some garlic, crush it and peel it. 2 pieces of the white part of scallion. Crush it to release the flavor as well. 2 slices of ginger. Cut it into thin shredded. I also like to use some red chili. Slice it thinly. You can use bell pepper if you don’t eat spicy food.
    - Heat up your wok a little bit. Put your hands above the bottom. When you can feel the obvious heat coming up, add a tinny bit of oil just to lubricate the wok. Toss it around and add the sausage. If you use a non-stick wok, you don’t need to add oil because the sausage has some fat.
    - Stir for about 2 or 3 minutes. You should see that the sausage become slightly transparent. That means it is cooked through. If you like the sausage to be a little chart, you can fry it a little more.
    - Add a little more oil to the same wok and throw in all the aromatics along with the snow peas. I always say that the secret of Chinese stir-fry dish is high heat or big flame. But for snow peas, it doesn’t produce too much water compared to other vegetables so you can cook this one medium heat until it is soft. What I like to do is cook it until most of the snow peas have some black chart mark, that is the time to add the seasoning. It is very simple, some white pepper, some salt to taste and a tbsp of soy sauce. The sausage is already salty so It is very important to add seasoning now. You want the flavor to get distributed first then transfer the sausage back to the wok. Stir everything together and you are done. Just simply plate it up and serve it with white rice.

    4:26 I *LOVE* to hear crunchy veg especially when paired with chewy rice and meat dishes. It almost makes up for no crunchy fat or even a toasted bread!

    Delicious and really helpful detailed method. Although the base recipe is easy, I have had mixed results with similar recipes, partly due to trying to finish and serve a few dishes and getting the timing off.     Sometimes I like to put the lap cheong on top of the rice during the last 10mins of cooking. The fat will seep into the steaming rice and add a little flavour to it. It made a simple yet special additional taste to plain white rice. Oohhh, I am content with just those, and I always refill my bowl of rice 😁

    Lovely. I cooked my Chinese sausage with long beans, garlic shoot, garlic, ginger, cooking wine, soy sauce, and Sichuan style chilli bean paste, and a little chicken stock with starch. Delicious and cheap.

    OMG, I can’t believe a recipe with Chinese sausage! Love the Wing Wing pork and chicken combo sausage. Love cooking the sausage in white rice! Old school but yummy. Just eat the rice and sausage together....you can also use the sausage in fried rice...

    hi. I always come home hungry after a hard days work....and after watching your video even more hungry....quick to get ready I like food on table quick after a hard days work...many thanks again ...as Cantonese sausage cost a lot at my local Chinese store,,making the sausage from your other video ... makes lots of sausages would work out a lot cheaper too

    I have an idea, could you do a video on what to look for when buying a decent wok? How big should it be, thickness of metal and what kind of metal.
    I have one, but it's not a traditional one. It has a bit of a flat bottom and it's coated in Teflon, which I don't like. I don't remember if it came with a fire ring or not. Also, tips on the proper way to use a wok.

      You can do that too, it depends on how soft you want your snow peas to be. I like it to be a bit crunchy.

      @@SoupedUpRecipes i boiled it first and it was pretty soft. next time i will try it without boiling to get the crunchiness. surprisingly my twin sons loved it and gave me a thumbs up. it was my first time making it. thanks.

    So I've found this sausage in a local market that has a pretty big Chinese/Asian section, but I was a little put off because it was a non-refrigerated, shelf stable product. If it was an American sausage, that would mean it was a low quality product, the kind of thing sold in road side gas stations. Is that normal for this kind of sausage to be unrefrigerated or should I keep looking? I'm interested to try this recipe, and also its used in a philippino stirfried noodle dish that I like a lot.
    I did watch your video about making it, but I doubt I could use enough to make it worthwhile.

      Don't worry. They are vacuumed sealed, but once opened, you need to put them in a Ziploc bag in your fridge.

    What kind of Wok is that what u use...I can't figure it out what kind of material this might be?! I'm using an carbon steel...😵😵😵 What's yours?!

      The wok I am using is cast iron work. Carbon steel is good too.
