    This is not a dish that is wildly known in China, but the story behind it is quite interesting. Stick with me and learn how to make this dish better than your local take out.

    Ingredients for the chicken marinade [Serve 4-5 people]
    - 4 boneless chicken legs [2 Pounds]
    - 3/4 tsp of black pepper
    - 1.5 tsp of salt
    - 2 tsp of soy sauce [Amazon Link: geni.us/MGHf]
    - 1 egg yolk
    - 2/3 cup of cornstarch + 2/3 cup of flour
    Ingredients for the sauce [This sauce is only enough for half of the chicken. Make sure you double the amount]
    - 1 tsp of oil
    - 1 tsp of grated ginger
    - 1.5 tsp of grated garlic
    - 8-10 pieces of dried hot chilies [Amazon Link: geni.us/hmTd]
    - 4.5 tbsp of sugar
    - 2.5 tbsp of Chinese black vinegar [Amazon link: geni.us/Bqw98A]
    - 1 tbsp +2 tsp of soy sauce [Pearl River Bridge Natural Brewed Light Soy Sauce: geni.us/wABlLXf]
    - 1/2 tsp of cornstarch
    - 3.5 tbsp of water
    Others
    - Oil to deep fry
    - Cilantro for garnish
    - Toasted sesame seed to add at the end
    INSTRUCTION
    - Cut the chicken into big chunks. It is better to use boneless chicken leg with the skin on. Marinate it with 1.5 tsp of salt, 3/4 tsp of black pepper, 2 tsp of soy sauce, 1 egg yolk. Egg yolk contains a certain amount of fat, which will make the chicken extra crispy. Cover it. Let that sit for about 15 minutes.
    - While waiting, combine 2/3 cup of cornstarch, 2/3 cup of all-purpose flour together. Cornstarch is another trick to make the chicken crispy. If you only use all-purpose flour, the outside layer will be a bit doughy.
    - Put all the chicken into a big container and dump the flour mixture to cover the chicken. Put on the lid and Give it a few good shakes. Then put the chicken pieces in a sieve and shake off the excess flour.
    - Heat the oil to 350 F. I am using soybean oil. You can use any high smoke point oil.
    - Put in the chicken one by one. Let it fry for a minute or 2 so the surface can form up a little. Then you can flip them over so they cook evenly. After 4 or 5 minutes, the outside layer should be slightly golden and crispy. Now is the time to take it out. Let them rest for about 15 minutes.
    - We are going to fry the chicken again. Double frying it to make sure the crispy outside layer stays longer. If you have guests coming, you can fry the second time right before serving.
    - HOW TO SAVE THE CHICKEN: Whenever I make General Tso’s chicken, I will make more than what I can eat. Freeze the chicken right after the first frying. Next time I want to eat General Tso's chicken, don’t need to defrost, just directly start the second fry. It will save you a lot of time.
    - Fish out the small particles that are left in the oil. Heat it to 370F. Fry the chicken for a minute or 2. Once they are beautifully golden brown, you can take them out.
    - Now we can make the sauce. In a sauce bowl, combine 4.5 tbsp of sugar, 1/2 tsp of cornstarch, 2.5 tbsp of Chinese black vinegar, 1 tbsp +2 tsp of soy sauce, 3.5 tbsp of water together.
    - Besides that, prepare some dried hot chilies. (The chef who invented this dish, he is from Hunan province. Hunan is one of the places in China where people are obsessed with chilies. So just a little spicy kick.
    - Heat up your wok, add a tsp of oil, some grated garlic, grated ginger, and the dried chilies. Start with low heat. Stir and saute them. We want to toast the chilies until it is slightly smoky, you should be able to smell it. Pour in the sauce. [Note: The sauce amount I gave is only enough for half of the chicken. Make sure you double the amount if you use the full recipe]. Cook the sauce on medium heat until it becomes a thin syrup texture. Then you can add the chicken. Toss everything until the chicken is coated nicely. And you are ready to serve. Add half tsp of sesame seeds for some nutty taste. Top a little bit of cilantro for presentation. Enjoy!

      Yeah, I like that she writes her stuff up. I like to incorporate ideas I get from different recipes of the same thing from different sources and make my own recipe with my own technique, since sometimes these come from youtube videos and websites, her detailed writeups are very helpful since I can just run off a copy on my laser printer.

      Ive made 4 of her dishes and I’m purchasing her wok to support her. I was definitely Chinese in another life. I am obsessed with her videos! My son and I love Chinese food, she’s helped me make incredible dishes and showed me the right authentic sauce brands to use and buy at my local Asian market :)

    My wife and I are addicted to our local take-outs general tso's, but i must say... i made this recipe for us and it came out so amazingly! I substituted the Chinese black vinegar for rice vinegar since nowhere locally had it, but it truly was delicious. Ill be checking out more of your recipes and hope to see many more in the future.

    I made this for dinner tonight except I cooked the chicken in whole pieces - my husband likes chicken breasts and I like thighs so that's what I cooked. Anyway, I cooked them in my air fryer. I did everything you instructed up until the cooking of the chicken. After I tossed the chicken in the flour and corn starch, I spritzed it with avocado oil on both sides and put it in my Ninja Foodi Air Fryer Duo. I put egg rolls in the second air fryer basket. After they were done, I coated them in the sauce in a sauce pan I had on the stove. The sauce was all nice and sticky and I just rolled the chicken around in it. Let's put it this way, my husband's plate was clean when he finished. That's saying a lot.

    Tried this recipe. The result tasted really close, if not, way better than the take out version, we’re used to. Chicken very crispy and flavour salty, sweet and spicy. Had to substitute a few ingredients. Subs were : Mirin (for vinegar), red chili flakes instead of chilis. I also made some veggies (white onion, red peppers, green onion and mushrooms diced) in the wok ahead of time and added with chicken when the sauce was reduced and thick enough to finalize. Served over rice. This recipe is by far the best one I have found and tried from the internet. Definitely want to make her orange chicken now!

    The tip to use a strainer to drain fat from fried foods is such a good idea. Can't believe I never thought of that. My family (and myself) have always dabbed fried foods with paper towels to get the excess oil off, but using a strainer would save all that waste of the paper towels. We use strainers for cooked beef to get the fat off, but never thought of it for fried chicken, etc. Thank you for sharing that tip. I will use it from now on!

    I am astounded at how good this recipe was exactly as written. The first two times I cut out this or that because I didn’t have the right ingredients but exactly as is, honestly the best General Tso’s I have ever had. You are amazing.     Made this for lunch today - This is the closest that I've ever gotten to making this dish correctly! It's (so) close to the take-out GTC, but that's likely because of a few substitutions. I used boneless/skinless thigh meat as that is what I had in the fridge. I agree that the skin would add a lot of flavor and additional crunch. I did have to substitute balsamic vinegar for the Black Vinegar (ordered that from you link immediately) - I think that is key. However - I'll omit the 1.5 tsp salt from the breading mixture, otherwise, this was spot-on~! The soy sauce in the chicken marinade adds all the salt needed. The crust is super crunchy, holding that crunch throughout the meal! I have been trying to get that right for decades (HUGE Thank you for that!) I also substituted chili paste as I do not have dried red chilis handy - this worked really well - I think using the paste gives you more control over the spiciness. Big "thumbs-up" on this recipe! **EDIT** It just dawned on me, regarding the saltiness...I used only 2 large thighs, about 1/3 the amount of meat - THe salt and soy were for a whole batch...mea culpa!

    Thank you SOOO MUCH for pointing me to the history of the dish and the general. I was lucky enough to watch a TED talk about this subject and the subject of "Chinese food". It reminded me of finding out about my English and Irish heritage and the struggles of all immigrants.

    Made this yesterday. Unequivocally the best GTC ever! After cooking I put it in a large bowl and sat it in between my wife and I. Nothing else, just chopsticks. We didn’t stop until it was all gone!!! The crunch, the spicy sweet sauce...indecribably yummy!

    Hi, I tried your recipe today. The chicken was incredibly crispy from the outside, juicy from the inside. Seasoning on chicken was so on point. Without the sauce it would make a great popcorn chicken dish. The sauce is more on a sweet side to me. But it was extremely flavorful. I added a bunch of sichuan peppercorns and it gave a nice kick.     Made this tonight, the results were amazing! This is the first time I tried the "double fry" method and the results were way better than expected. The difference is immediately obvious. The sauce perfectly captures the distinct General T'so flavor. Thank you for everything you do, as always.

    I gave this video to my dad, so we could make this for my mom for Mother’s Day. He did a test run tonight, and said that this was the best he has ever had! I didn’t try it, as I don’t eat chicken (since I’m a vegetarian), but it smelled absolutely amazing. Thank you for putting this up on UA-cam!
    We plan on serving this atop a bowl of steamed white rice, just like you did. However, I think some thinly sliced/shredded Chinese Cabbage would be an even better garnish, so I think I’ll try to have him garnish it with that. I also plan on serving a ramen-esque noodle soup as a side dish (Japanese ramen, not college ramen).

    This is one of my favorite “Chinese” dishes and the first thing I look for on the menu or buffet. I’m attempting to make it myself for the first time and I like your methods. I notice you didn’t use oyster sauce 🤔.

      Right, or some Orange juice and Sesame seed oil....The General Tso Chicken, I've eaten all my life, in NJ and NYC, all tasted like Orange Chicken with the chilis added to it and sesame seeds..

    I made this recipe tonight and it was delicious! Highly recommended. I fried my chicken thighs in peanut oil. I was able to find the black vinegar and dried red chilies at an oriental store. Everything else can be found at a general grocery store. At first I was worried that there wasn't enough sauce in the recipe, but it turned out to be just the right amount. It takes a while to coat all of the fried chicken pieces in sauce (tumbing by hand), but eventually everything was coated and I had plenty of sauce on everything. I also decided to add in sautéed sweet onion and red peppers with chopped green onion on top (personally I think it makes it better)

    OKAY, I KNOW I'M YELLIN, BUT IMMA TELL U, I MESSED THIS RECIPE UP, AND IT STILL CAME OUT AMAZING!!! I CUT MY CHICKEN TOO BIG, I DIDNT MARINATE, I MIXED THE FLOUR WITH THE MARINADE, I FORGOT THE GARLIC AND USED GARLIC POWDER, I DIDNT HAVE DRIED RED CHILIES AND SUBSTITUTED MEXICAN GREEN CHILIS... FROM A CAN!
    THIS STILL CAME OUT AMAZING!
    Okay, Ill stop yelling, but it really is good! Try it, and enjoy!

    I just made this, with less sugar and more garlic and chili pepper. I also used breast tenderloin with the baking soda trick, and it turned out amazing!

    I tried this recipe today... and let me tell you!! It was so good. I hadn't eaten general tsos chicken in years because I would always end up disappointed at restaurants. This was a mega hit for me and my family. I wasn't able to find the black vinegar anywhere so I substituted it for malt. Thank you!! Keep the videos coming 💗

    i have this dish in so many different places and each one really has been different. after making this I have to say this is by far my favorite. the crispiness of the skin was such a delightful addition. the sauce was tantalizing too. i added a touch of maggi and msg to the sauce too. it was so freaking good!

    I just made this for TGIF dinner!!!! so good and much healthier than take-away. Controlled the salt, less sugar, and nothing artificial! Thanks for the recipe :-)
    I used brown sugar instead of white for a darker colour and richer sweetness.

    I made your General Tso’s recipe twice and it was just alright. Your recipient is probably authentic but for it to be better than take out for me, I had to soup it up. I added
    2 tablespoons sweet chile paste, chicken broth instead of water, 1 -2 tablespoons Oyster sauce and a tablespoon dark soy and it tasted exactly like or better than my local take out. It might not be the real deal but I thoroughly enjoyed it. I couldn’t have done it without your recipe. And my measurements are are already doubled as I doubled your recipe. Thanks for sharing!

    I finally found a generals chicken sauce. I looked up so many on youtube and never liked any of them. Yours is very simple. But the best. I added malassis and some sweet chili sauce. You taught me a few new things too like cooking tips

    I just made the General Tso's Chicken and it turned out perfectly. We fixed the full batch for just the 2 of us and thought we would have the leftovers for lunch. My man may not leave any it is so good.

    Made this recipe last night and I must say it’s probably the best General Tso chicken I’ve ever had! I had to substitute balsamic vinegar with a little bit of Worcestershire as the black Chinese vinegar, and used fresh chilies instead of dried. Super spicy, super tasty, super easy! Keep up the great videos, I will be making many more of your dishes.
