Hello, thanks for dropping by my channel! I am Chiew See, or known as Autumn Kitchen in Instagram, Autumn Baking Diary in Facebook.
I started home baking ever since I quit my engineering profession more than a decade ago. Sourdough baking has come into sight since 2015 and my first book was published in 2019, Autumn Baking - Natural Yeast. My channel covered mainly sourdough recipes, and some yeasted bread, cakes and pastry too. Rest assured that what I have shared here have been home baked and tested, easy to follow and fool proof!

How many tarts from recipe? How much pineapple jam?
Depends on ur piping tool/mould. Jam abt 8g. For me it yields 80+- tarts

這個影片看了快一年 昨天終於照著配方做了一次 烤出來完全一樣 超漂亮超完美的巧克力吐司 吐司柔軟 土司邊像生吐司一樣薄 😂家人超愛 太開心了❤ 只是台灣現在的溫度讓我最終發酵等了6個半小時才能烤製 出爐冷卻後吃起來酸味明顯 室溫隔夜再吃 酸味明顯降低超多 巧克力味超濃 真是太好了❤很喜歡妳的影片 之前做過裂紋巧克力麵包也超美超好吃 完美復刻❤謝謝妳的用心 讓觀看的人手藝越來越好 thank you so much❤新的一年繼續復刻其它完美的麵包😊

Very nice recipe, question: why is it different for over night starter recipe? Is it since you are using less starter, you add more water and flour so that the initial starter added develops and makes up for the missing starter. In that case when added a bit more sugar, what does it do to the dough? Does it accelerate the process or is it so that you can provide more food to the starter?
Diff ratio feeding for the sss (sweet stiff starter) gives different timing to peak. Over night starter feeding i usually make it 1:3 (starter:flour). Sugar used to create osmotic stress to the starter to limit the acidity/sourness

Hi, my built in oven has 5 levels so which level should I bake these cookies at ? Is it at mid level or mid low,4th level counting fr the top?
i usually put 4th level from top

I don’t prefer. The taste are diff and also this cookies can be kept longer without egg

Yes. If you feed your pasta madre with a higher ratio (pm : flour 1:3, 1:4 etc) it can stay in fridge for longer

The paper cup was from a local baking store. It’s meant for cup cake or muffin
I found a bunch with this search term: "mini loaf pan paper cardboard." I didn't open the pages, so I'm not sure if they're the right size. Edit: I think if you add the word "muffin" at the end, it's even more successful.
My sweet stiff didn't rise that much.
Likely your liquid starter not strong and active to use for sss. Sss require strong liquid starter
Whay do you measure the pH? What's the reason?

This is a starter (natural yeast). It will be stated in each recipe of the ratio and composition

請問硬糖種跟一般酸面種 做出來的味道跟質地會不同嗎?
稍稍不一样。糖硬种旨在压抑酸度。面包质感也比较有韧性

I lived in the states and it's hard to find the tool here. Every time I search it just shows be cookie press
Alternatively can shape into round ball. It is also common to have round pineapple tart here in Malaysia

You can but rye starter may not have strong gluten built for the dough since it is added to the dough.

Hi I have been watching your videos and wanting to try some of your recipes. Maybe my starter not active so sweet stiff starter did not rise 3 times. Will it help if I add some yeast? If I do not have whipping cream, what substitute can I use? Thank you for your sharing.
If you are alright with taking yeast, you can add 4g instant yeast to your dough. You can substitute whipping cream with milk at same amount
