The yolk batter is thick. When u add milk, batter thicken and you can add yolk quickly. There is a possibility you over heat the oil so the batter tends to be too thick. Use small part of meringue to loosen the yolk batter. Then only pour back to the rest of meringue to mix. This ease the mixing since yolk batter is thick

I use A size egg. The final proof took me about 2.5hr at 28C

Can try with 2g instant yeast. Adjust hydration according since no starter is used

只要酵种没塌(collapse),都还能用的。如果塌了才用,恐怕面包会带酸、还有面团发酵能力比较不理想。
