  • This is another great recipe to clear your sourdough discard. Dorayaki is a simple Japanese pancake, you can always pair it with your favourite filling, red bean paste, nutella, jam or even cheese paste. Using Dorayaki to make hotdog pancake is another great idea to surprise your family and kids!

    *Recipe makes 14 pieces of small round pancake
    Ingredients (batter)
    85g all purpose flour
    100g sourdough discard
    90g milk
    1 egg
    15g corn oil
    30g sugar
    1/2 tsp baking soda
    Fillings
    Nutella, fruits jam, red bean paste, peanut butter, cheese paste

    85克 中筋麵粉
    100克 棄種
    90克 牛奶
    1 粒鷄蛋
    15克 食油
    30克 糖
    1/2 茶匙小蘇打粉
    内陷
    榛子酱,果醬,豆沙餡,花生醬,奶酪醬

    This is the best of the best pancake recipe. It started as a SD discard recipe but now is like a main course. Mr culture is reserve to make this all time favourite pancake.     This is a great recipe; my SD was not as thick/sticky so i added 30g more of flour. Still, it makes really awesome pancakes, fluffy and no hint of SD. Thanks for sharing !

      Chill in fridge overnight. You may turn on the subtitle with all the instructions, just click the “cc” (subtitle)

      neoflam. the discard usually is very sticky after you store in fridge

    Do it necessary to chill over night? Can I use shorter time than that??

      You can cook it right away. Overnight is for the purpose of cooking fresh breakfast in the morning

    Hi, how many days can we store the discard in the fridge? I used to freeze it

      I usually keep for 2weeks max. If you need to keep longer then you can freeze it up, thaw when needed.

      You can try replace the egg with 40g milk. Adjust the consistency by adding milk/flour is too thick/thin

      If sourdough discard/starter is omitted and replaced with yeast, you need to adjust the hydration too

    Can I prepare the batter in the morning and cook it? Need to rest in the fridge? Coz I missed the last bit of the instruction so I didn’t prepare the batter the night before

      Yes you can cook on the same day, instead of put into fridge overnight, you just leave it at RT 1/2 - 1 hour

      overnight to let the batter developed more, but it is absolutely alright to make it same day

    when i use SD for pancake or waffle, the taste tends to be a tad too sour, any idea how to reduce the sour-ness/smell?

      Even with my recipe? Usually the egg sugar in batter will cover the sourness.

      @@autumn.kitchen i used almond milk this time, there was no sour smell at all. Not sure if it was the almond milk or the egg/sugar effect
