Vegetarian Crispy Pan-Fried Noodles | MI XAO GION CHAY| Easy Recipe
Ingredients:
• 14oz (397g) fresh or dried egg noodles
• 1 ½ cup mixed vegetables (yu choy, bok choy, carrots, snap peas, mushrooms)
• 1 package of tofu, cubed
• ½ tbsp sugar
• 1 tsp vegetarian seasoning (vegetable seasoning mixed - amzn.to/47MKJIB)
• ½ tbsp soy sauce (Knorr Liquid Seasoning - amzn.to/48BMutr)
• 1 ½ tbsp vegetarian Stir-fry Sauce (Vegetarian Stir-fry Sauce -amzn.to/48F0nHg )
• ½ tbsp sesame oil (Sesame Oil: amzn.to/3Z1YVtE)
• ½ tsp vinegar
• 350ML water
• 1 ½ tbsp cornstarch mixed with 2 tbsp water (Cornstarch - amzn.to/3JXLczH)
• Chopped green onion/cilantro (for garnish)
For Frying:
• Vegetable oil for frying

Instructions:
1. If using fresh noodles, blanch them in boiling water according to package instructions. Drain, rinse, and set aside. If using dried noodles, cook them according to the package instructions. Drain and set aside.
2. Pan-Fry the Noodles: Heat 4-5 cups of vegetable oil in a large skillet or wok over medium-high heat. Add the cooked noodles to the hot skillet in a single layer. Allow them to cook without stirring, ensuring they become golden and crispy on one side. Carefully flip the noodles to the other side to crisp them evenly. Let them cook until both sides are golden and crispy. Set aside.
3. Tofu and Veggies: Cube the tofu and air fry it at 390 degrees for 20 minutes until it's crispy and golden. Blanch the mixed vegetables in boiling water for 1-2 minutes and set them aside.
4. Sauce It Up: In a small bowl, combine the soy sauce, vegetarian oyster sauce, sugar, sesame oil, vinegar, and vegetarian chicken-style seasoning. Pour this sauce mixture and water into a hot pan, ensuring everything is well coated. To thicken the sauce, add the cornstarch mixed with water into the pan. Add the tofu and vegetables, stir-fry for 1-2 minutes. Stir well to combine and let it simmer until the sauce thickens.
5. Final Touches: Transfer the crispy pan-fried noodles to serving plates. Pour the tofu and vegetable sauce mixture over the noodles.
6. Garnish: Garnish with chopped green onions and cilantro for that final touch and added flavor.
7. Serve your Vegetarian Crispy Pan-Fried Noodles hot and enjoy!

When Bò Kho, a 100% Vietnamese invented dish becoming a Khmer foods? (Bò Kho is a Vietnamese food created with influenced from French food named Ragu/Lagu). Slowly, many Vietnamese foods are stolen by Khmer Cambodian and then they blaming back Vietnamese people stealing their culture "Youn barbarians steal Khmer foods". In most history of Cambodian, they eat by bare hands, could they invented hot watered foods which should be eaten with chop sticks and spoons? Many foods they blame our nation steal from them: Bò Kho (Kor Ko), Bò lúc lắc (Lok Lak), Bánh hỏi (Banh hoi), Bánh xèo (Banh chev), Nem (Nem Battambang), Bánh Chao (Banh chao)...a lot... Vietnamese people could cook many foreign style foods but Vietnamese people always credit to inventors like Hủ Tiếu Nam Vang (Kuyteav Phom Pênh - A dish from Chinese Cambodian), Lẩu Thái (Thai hot pot)... Khmer Cambodian are so uncivilized with those behavior.

While dry squid or dry shrimp do add a stronger seafood flavor, the recipe can still taste equally delicious without them. Feel free to customize it to your liking!
