  • Mango Sticky Rice
    For Cooking Sweet Sticky Rice:
    • 2 cups glutinous SWEET rice, cleaned ( Thai Sweet Rice -amzn.to/3mXRndi)
    • 4 pcs Pandan leaves
    • 2 cups water
    • 1 cup (19 oz) Coconut Cream Mae Ploy Coconut Cream -amzn.to/3mXRndi)
    • ¼ cup sugar
    • ½ teaspoon salt
    For Coconut Cream Topping:
    • 1 cup (19 oz) Coconut Cream (Mae Ploy Coconut Cream -amzn.to/3mXRndi)
    • 3 tablespoons sugar
    • ½ teaspoon salt
    • 1 tablespoon Rice flour or cornstarch flour
    • 2 tablespoons water
    For Serving:
    • 4-6 ripe mangoes, peeled and sliced
    • Sesame seeds and peanuts for garnish (optional)
    Instructions:
    For Cooking Sweet Sticky Rice:
    1. Clean 2 cups of glutinous rice by rinsing it until the water runs clear.
    2. In an electric rice cooker, place the cleaned rice, 2 cups of water, and 4 pcs of pandan leaves. Cook according to the rice cooker's instructions.
    3. Once the rice is cooked, transfer it to a large pan.
    4. Add the ¼ cup sugar, 1 cup coconut cream and ½ teaspoon of sale to the pan and stir gently to coat the rice evenly.
    5. Cook over medium heat, stirring occasionally, until the coconut cream has been absorbed by the rice and the mixture has thickened slightly.
    For Coconut Cream:
    1. In a small saucepan, combine 1 cup of Mae Ploy Coconut Cream (remaining from the same can), 3 tablespoons of sugar, and ½ teaspoon of salt.
    2. Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved.
    3. In a small bowl, mix 1 tablespoon of rice flour with 2 tablespoons of water until smooth.
    4. Add this mixture to the coconut cream mixture and stir until the mixture thickens. Set aside.
    To Assemble:
    1. Spoon the sticky rice into individual serving bowls or a large serving dish.
    2. Top each serving with slices of ripe mango.
    3. Add coconut cream topping mixture.
    4. Sprinkle sesame seeds and peanuts on top of the mango (optional).
    5. Serve immediately, while the rice is still warm.
