Landlocked Atlantic Salmon In Newfoundland
Переглядів 31521 день тому
Down in the States, they're called “Landlocked salmon,” and tide deep in lakes. In Newfoundland and Labrador, we use the French / Indian term “Ouananiche”. Grand Lake has Ouananiche. The water from the Lake only flows through the intake to the Hydro Power Plant in Deer Lake. This is the only access they have to the ocean, therefore all the fish are considered Landlocked and they all reduce with...

    Home made corned beef is crazy easy, you control the salt content, cheaper than canned. Beef brisket, rub with salt and spices ( pickle spices is good), leave in ziplock bag in fridge for 7-9 days, rinse, cook until tender( stovetop or pressure cooker), Cook up chopped onions, add cubed parboiled potatoes and cubed beef , cook until crusty, you are done.

    I used to make this a lot but I always put the meat in raw on top of the veggies and that lovely beef flavour goes throughout. I also use 2 cans of soup, not just one. A family favourite.

    My grandmother (she would be 122, born in 1902) used to make it almost the same way except hers were salty and almost white as opposed to sweet & dark. Just a little molasses, brown sugar, dry mustard (just a bit) , a little oil at the very beginning on the beans, this way they stay whole more and like you : onions, fatback (with a little meat if possible) & water, salt & pepper. When it gets colder, I will definitely make some!

    • @NewfieLifestyle
      @NewfieLifestyle 41 хвилина тому

      The salt pork puts a rich salty flavor. We grew up using salt pork, but now it seems to be overpowering at times, I'm just not used to it anymore. We freeze our baked beans too and use them as a side dish for other meals. I will also take some of the beans from the freeze in winter when I'm having a cookup in the woods. We vaccine packs the beans in small portions. It holds up very well.
