Ellen’s Yeasted Pumpkin Spice Bread/Rolls with Craisins and Raisins
***There is a typo on the pdf. It’s 1.5 grams of ginger.
This bread is a soft, fluffy bread that has the popular pumpkin spice flavor of fall in the form of sandwich bread. It’s NOT a dessert type/cake bread! It makes incredible toast with butter, cinnamon toast, peanut butter sandwich, etc. Think after-Thanksgiving sandwiches with turkey and cranberry sauce! Yummy! Rolls would be perfect for your Halloween or Thanksgiving table or anytime at all.
In this video I make one batch using Dough course and baking in the oven. I make the next batch totally in the bread machine. The 3rd batch is made on Dough course, but baked as rolls instead of a loaf of bread.

150g pumpkin puree

540g Bread flour
70g sugar
8g salt

    Welcome back, Ellen! Thanks for the excellent video. I will make a loaf of this bread soon (with the raisins and the Craisins). It looks positively delicious! Questions: What kind of a bread knife do you use? What kind of ovens did you put in? (The new ones, I mean.) I have the same as your old ones.

      @@shawngirl1959 my bread knife is a Saken brand from Amazon.a.co/d/5awRsIv Mostly we use the Cuisinart Electric slicer. We got a Wolf double oven. I feel very spoiled! Thank you for the kind words.

    Hi Ellen, how do you suggest I store bread flour? Does bread flour last a long time? I just put my bags of bread flour into the freezer (for days) to kill any bugs then, I take it out & sit on the counter for a few days to come down to room temp. I then will store in huge air-tight glass jars. That is what I do with self-rising & all purpose flour. Just wondering about bread flour. Thank you so much!

      @@Maleezza treat it exactly the same way. The bags will have an expiration date on them. I go through them so fast, I don’t have to worry about it!

    Hi Ellen from Australia , glad to see you back. I have learnt so much from your videos. I'm a newcomer to bread machines. I originally bought a store brand machine which made nice bread, but I didn't like the high top short loaf. After watching your videos I searched here in Australia and found one that makes a traditional size loaf using 2 paddles. I have cooked in the oven, but just prefer to use the breadmaker. Mine does say you can take the paddles out after the knock back, so I do that and also reshape the loaf. My only complaint this way is that the crust is a bit too hard done in the machine, even on the light setting, so I generally pull it out about 10 minutes prior to the end of cycle. Checking the temperature with a thermometer as suggested by you to make sure it's cooked through. Then I wrap in Alfoil and then place in a calico bag for approximately two hours. Seems to work pretty well. Thankyou for all your knowledge you pass on to us.

      @@karend9889 ooh, that would be your experiment. I’ve never used it. Is it an even mixture or is it more cinnamon and less ginger, nutmeg, cloves, etc.? Maybe try 6-7g of it?

    Is the gold yeast that important to use in this recipe, I ask that because I don’t bake sweets or other breads using this, it’s such a large size for me to purchase if I am not going to have much use for it.     One of my favorite breads is Oroweat Honey Wheat Berry Bread. Oroweat discontinued it 😩 *It has been made since 1932. This is why I decided to try and replicate it by baking my own bread.

      @@Boopbdo it’s been so long I had to rewatch. After I finally took the bread out, I just left the tray of water in there until way later when I was cleaning the kitchen. The water was completely cool by then.

    This lady is awesome!! She is such a genuine person & like she says, she will answer your questions. She has several of mine. She is so nice & kind. She has excellent recipes on her UA-cam channel. Watching her channel, has inspired me to buy the same bread machine that she has & to try to make bread. I tried one of her bread recipes yesterday & it turned out so perfect. I have bought the uncooked frozen dough from the store & they never turned out worth a flip.     How nice of you, Ellen, to buy a Pullman pan. I see there are smaller Pullman pans, and some on UA-cam baked two small ones in the Air Fryer! I didn't have a Pullman pan but made half of my French Bread recipe in a 5x7 loaf pan with foil securely tucked under the pan as it baked in the Air Fryer. Tastes good as the other half that I baked in the standard oven but missing the golden brown crust when baked in the Air Fryer. All this just for interest. I probably don't need a Pullman pan either, but this was fun to see the results in your kitchen.

      Why my recipes are in grams I grew up using measuring cups, and spoons like most other people in the United States. I didn’t know anything different for many many years. After I had baked bread for a year or so with inconsistent results, I noticed in my Facebook Bread Machine groups that most people were making bread using gram weights instead of measuring cups. I didn’t really understand what the benefits were at first, then I bought a scale and started using it and soon I came to understand why people weigh ingredients instead of measuring them. Here are the benefits of weighing your ingredients: 1. Weighing is the most accurate form of measurement. 2. Weighing gives you more consistent successful results. 3. Weighing takes much less time and makes fewer dirty dishes. 4. Most of the rest of the world uses grams. I write my recipes in grams because I have “bread friends “ from all over the world who want to make my recipes. 5. I’m lazy! Weighing is so much easier! I’m sorry but I cannot convert my recipes to cups. You are welcome to try using Google. I will tell you that with King Arthur bread flour, I use 135 grams for a cup. If you try weighing, I know that you will like it better than measuring with cups. Absolutely everyone I have taught how to do it has told me within a couple weeks, they are so glad I convinced them to try it! They tell me they would never go back to measuring with measuring cups! I feel the same way! Now having to use measuring cups occasionally for a cookie or cake makes me groan! I’ve become so lazy because weighing is so much easier!     I have a question. The recipe says "punch down twice" I saw you didn't do that. Does that mean you do not have to do that?

      @@Maleezza the bread machine does it!!! It mixes it, lets it rise, punches the dough down, lets it rise again, and depending on the machine, lets it rise a third time before baking.
