You can make this bread using your Whole Wheat Course or on Dough and bake in
the oven. I explain both ways in the video.
:
• 200 g Orange Juice
• Add Half and Half or Full Fat milk to the orange juice to get 345g of both.
(145g of milk)
• 60g Honey
• A few drops of Orange Extract (optional)
• 132g Bread Flour
• 419 g Whole Wheat flour of your choice
. 10g vital wheat gluten
• 7g salt
• 57 g salted butter (If you are using unsalted butter, add 2 g more of salt.)
• 7g SAF instant yeast-GOLD LABEL for sweeter doughs
Add at beep:
• 60g Craisins (any dried cranberries) tossed in a tiny bit of flour
• 30g chopped candied orange peel (optional. I just happened to have made
some earlier in the week.) Ingredients
For Baking in the Bread machine, choose Whole wheat course. At 5 minutes into
kneading, be sure to check your dough at 5 minutes into kneading. DO NOT EVER
EVER IGNORE THIS STEP. SET A TIMER! After that you have to wait another
approximately 9-13 minutes for the appropriate time to add the Craisins and
candied orange peel., When you hear the ADD beep, or whenever your machine tells
you is the time, add in the Craisins and orange peel. When the dough is ready, take
it out, put in loaf pan, let it rise in a warm place for about 45 minutes and then
bake until internal temperature reaches about 190 degrees. For baking in the
machine, choose medium crust and let it go until it’s baked. Carefully remove fromCranberCranberry-Orange Pretty Healthy Wheat Bread
bread pan or loaf pan and cool on a rack for 2-3 hours before slicing. Freeze
whatever you’re not going to eat on the first day in thick freezer bags made for
homemade bread. I get mine on Amazon..

I've made several of your recipes and now use my Zojurishi bread machine on DOUGH cycle and then bake in the oven. I'll made this one today (no wheat gluten in my pantry) on WHOLE WHEAT cycle and then bake in the oven. I have candied orange peel from King Arthur and Craisins from COSTCO. Looking forward to another tasty bread for breakfast!
@@nikkijohnson2832 if you make it on whole wheat cycle it will bake it. If you want to bake in oven use dough course.

Just got through making orange cranberry bread - in the cooling stage. Thank you for all your tips and tricks. I have the same bread machine as you do “Z” and chose to bake it in my oven. Turned out great!!!

Yum! Thanks for another ‘whole wheatish’ option! Also, your panettone recipe was made several times (so far) this holiday season and got its usual rave reviews. I bake in a two pound tin to freeze in slices for easy snacking 😀.

I made the cranberry bread. It definitely needed the orange peel or zest. I used fresh squeezed orange juice and orange extract but still didn't have an orange flavor. I put pecans in it and it was great.

Love your vids and recipes. By any chance do you have or have done a vegan loaf, preferable wheat? I'm new to breadmaking and make your whole wheat bread a few times a week, my adult daughter has dairy sensitivities in the past but has been enjoying what comes out of the breadmaker, since we have been making bread she has been displaying allergy symptoms, sneezing, clearing throat and other unpleasant issues. We suspect it may be the milk and butter in the bread, would love to continue making bread.
Several recipes that are dairy free: rye, challah, semolina (ooh it’s so yummy), French, and more. You can, however, make my wheat bread recipes with water or a non dairy milk like maybe almond milk. I’ve never tried it because I’m allergic to nuts, but others have. Check recipes on my website. Email me for more help.

Hello Ellen, I noticed you didn’t cover the bread when you put it into the oven to rise. I thought I needed to cover while proofing so the top doesn’t dry out prior to baking. What have your experiences been? Thanks!
The oven is draft free, so it’s not necessary to cover it. I’ve never had the too dry out.
When on utube the little arrow is NOT on the screen. Even on your channel it is not there.

How much vital wheat gluten did you use? I use white whole wheat when baking with whole wheat.

No I don’t but many people do!
I do. I will do half milled and half store bought bread flour. I have hard red winter berries.

I haven’t made a video but here’s my recipe.Pizza dough by Ellen
300 g water
20g olive oil
490g high gluten flour (I use King Arthur’s Sir Lancelot)
18g sugar
5g salt
3g SAF INSTANT YEAST
Put ingredients in machine in order per manufacturer instructions, and set for dough.
Roll out dough (one large or two mediums) a minute at a time, letting rest in between, until you get desired thickness. Top with sauce, cheese, etc. Bake on pizza pan or stone 400 degrees.
You can freeze dough balls in freezer bags in olive oil. I divide this recipe into two balls to freeze. Defrost for about 2 hours on counter.
