Short answer: buy a Zojirushi Virtuoso Plus. It’s pricey but will last forever and it’s the newest model they’ve made. a.co/d/5GM8hNb Do not buy the Home Bakery Supreme. It’s a good machine but came out about 24 years ago-OLD TECHNOLOGY!!! The long answer: My Zojirushi Story by Ellen Walker Hoffman In about 1999 or 2000 I decided to get a bread machine. I’d had one before, don’t remember the brand, used it to death in about 4 years. I was without a bread machine for about 5 years, and finally decided I wanted to have one again. I decided to really do my research on Consumer Reports and other brand comparison websites. Everything at that time pointed to the Zojirushi Home Bakery Supreme. It was unanimous. That’s when I got the Home Bakery Supreme. I used it at least once a week until July 2018. Finally the bearings of the paddles froze. I believe it was because I wasn’t careful when I washed the bread pan and the bottom got wet. My engineer hubby tried to fix it but he couldn’t. (The actual machine may have been fine, as far as I know.) I found out that it would cost $100 for a new pan and paddles. It seemed like a stupid gamble to spend $100 on a new pan and paddles, not knowing for sure that the 18 year old machine would still work once I got it, when I could buy a new machine for $300. I was pretty sure I wanted another Zojirushi, but again, did my due diligence of research. It all pointed to the Zojirushi Virtuoso Plus. That was July of 2018. I’m more into baking than ever since I retired in June 2018. Hanukkah, December 2018 my hubby surprised me with the second Zojirushi Virtuoso Plus! I’ve used both at least twice a week. In January 2020 I decided I wanted a third. When I found the price had gone down temporarily to $272, I jumped at it and now I have three! I chose the Zojirushi after careful research, plus the fact that my first one lasted so long. It has nothing to do with shape of loaf, as I use the dough cycle. I rarely bake the bread in the machine. The best feature is the preheat/rest cycle. That is a non negotiable! I don’t want to mess with making sure ingredients are the correct temperature. I throw everything in cold from the refrigerator and I get perfect dough every time. I love my Zojirushis! There are many bread machines for many budgets. A Zojirushi isn’t the only good one. They are pricey. Do your research!

Why my recipes are in grams I grew up using measuring cups, and spoons like most other people in the United States. I didn’t know anything different for many many years. After I had baked bread for a year or so with inconsistent results, I noticed in my Facebook Bread Machine groups that most people were making bread using gram weights instead of measuring cups. I didn’t really understand what the benefits were at first, then I bought a scale and started using it and soon I came to understand why people weigh ingredients instead of measuring them. Here are the benefits of weighing your ingredients: 1. Weighing is the most accurate form of measurement. 2. Weighing gives you more consistent successful results. 3. Weighing takes much less time and makes fewer dirty dishes. 4. Most of the rest of the world uses grams. I write my recipes in grams because I have “bread friends “ from all over the world who want to make my recipes. 5. I’m lazy! Weighing is so much easier! I’m sorry but I cannot convert my recipes to cups. You are welcome to try using Google. I will tell you that with King Arthur bread flour, I use 135 grams for a cup. If you try weighing, I know that you will like it better than measuring with cups. Absolutely everyone I have taught how to do it has told me within a couple weeks, they are so glad I convinced them to try it! They tell me they would never go back to measuring with measuring cups!
