You yalk about fights that feel like dances, for me, Rellana is the ultimate example of that. She's probably my favorite soulsborne boss of all time. I was using the dryleaf arts to fight her my first playthrough of the DLC and the whole time it felt like the most incredible dance, the way it ebbed and flowed was amazing.

since u play so much DS2 u should learn what is a quick-roll
