Paprika and Garlic Chicken Quarters in the Big Easy Oil-Less Turkey Fryer

- In today’s video recipe I’ll show you how to make chicken quarters in the Big Easy Oil-Less Fryer. The Paprika and Garlic Chicken recipe that we are using is very simple and simply bursting with flavor. All of the ingredients are probably available in your pantry, so let’s get started.
Ingredients
• 3 chicken quarters (thigh and leg attached)
• ½ teaspoon Kosher salt
• ½ teaspoon cracked black pepper
• 2 tablespoons smoked paprika
• 1 teaspoon garlic powder
• ½ teaspoon dried thyme
• ½ teaspoon dried oregano
• Optional, 5 tablespoons Wells Chicken & Rib BBQ Sauce (or your favorite BBQ Sauce)
• 3 teaspoons (approximately) olive oil
Recipe Instructions
1. Rise the chicken and pat dry with paper towels.
2. Preheat the Big Easy Oil-Less Turkey Fryer on high for 15 minutes.
3. Mix the dry ingredients together to make the seasoning.
4. Rub the olive oil on both sides of the chicken and apply the seasoning to both sides.
5. Place the chicken in the Big Easy basket and insert into the fryer.
6. If you are applying the optional Wells Chicken & Rib BBQ sauce, do this when the chicken reaches 155-158 degrees F.
7. Cook until the internal temperature of the chicken quarters is 165 degrees F. You can take the temperature on up to 170 degrees if you prefer. Total cook today was 65-70 minutes.
8. Using protection (the basket is hot!), remove the chicken from the Big Easy Oil-Less Fryer and let cook until safe to handle (about 10 minutes or so).
9. Remove the chicken from the basket and serve!

I am loving my new Big Easy! The Well’s BBQ Sauce is a staple in my house here in NC. Can’t beat it! It is also great on Ribs as well. I also use a rub that a lady makes in TN and sells on EBay. She has a Chicken Rub, Rib Rubs, Brisket Rubs and Steak Rubs. Her user name on EBay is Countrygirl_1930. You should try them and you will then understand where I am coming from! I thought that too, but I bet that this would work fine in a 350 degree oven (uncovered) and finished under the broiler.
I'm sure you are spot on. My Big Easy runs 325ish or so....depending on outside temp.

I love your spice selection but next time maybe add like 1/2 tsp of the McCormick Harissa seasoning to it or even more? I am liking this taste so much I just made a double batch and put it in a shaker spice jar A+A+A+A+I am just learning how to use my Big Easy and boy am I loving it hands down.

I put the Harissa in it two times and love the taste and just added it to the mix I just made double of and put it in a shaker so I am ready for doing some more chicken now and I have some chicken legs to do this time around using the leg rack.

Just wondering why you did not hang the whole quarter upright using the leg rack?
No particular reason. I have that rack and it does work well with legs.
