Cabbage Soup - Lobscouse - Traditional Newfoundland - Bonita's Kitchen

  • Welcome to Bonita's Kitchen! Today we will be making Cabbage Soup also called Lobscouse. See recipe below!

    Serves 8 to 10 People:
    8 Cups water, for cooking salt beef, salt pork ribs, or ham bone
    2 cups of salt beef broth and 6 cups Water or vegetable broth
    2 Pieces salt beef, salt pork ribs or ham
    1 medium onion, peeled and chopped
    ½ medium cabbage, chopped around 3 cups
    1 medium turnip/ rutabaga, peeled and chopped
    3 medium potatoes, peeled and chopped
    3 medium carrots, peeled and chopped
    2 sticks celery, chopped
    1 Medium parsnip, peeled and chopped
    ¼ Cup Rice
    1 Tsp pepper
    salt to taste if needed
    Method:
    You need a soup pot (boiler), add two cups of salt beef broth (Jiggs dinner broth) and 6 cups of cold water. If you don’t have salt beef broth use more water or veggie broth.
    Soak beef in cold water, after soaking salt beef, or pork ribs for a few hours, then add beef only to the boiler, bring to a boil then cook for one hour.
    Add cabbage, let it cook for 15 minutes, then add all vegetables and rice and some pepper. Salt to taste if needed.
    Cook for 30 to 45 Minutes on medium heat until all vegetables are cooked. Remove from heat, serve as an appetizer or a main meal.
    Bonita’s Tips:
    After all ingredients are added to your soup pot (boiler), occasionally stir to help with equal cooking of your vegetables.If you don’t use salt beef, salt ribs or ham bone you replace by adding 1 tbsp of sea salt to salt the water before starting to add all ingredients.
    Jiggs Dinner is a meal usually cooked on Sunday in most NL homes, and the broth also called liquor was used for making soups and stews.     This is great. I can no longer use any salted meats in my cooking because of my wife's health problems. Still, I make things like this with fresh meat. Verily, this is the beginning of soup season. It is actually a bit chilly and very windy here today and I am making beef, cabbage, and barley soup tonight in celebration of the coming fall. I love making big soups in the fall and winter.

    My cabbage soup depends on what I have handy. Sometimes instead of meat, I add beans/legumes. I have never thought to add rice. Thanks for that idea, Bonita.

    OMG ! You did it again ..... This is one of our absolute favourites and I loved to hear you say (Jigs dinner) not many people here know what that is, poor fools ....lol We usually use a cottage roll for meat and of course we add Bok Choy(girls love it) When we get out to the butchers for some real bacon(grocery stores have that fake stuff) my girls immediately ask for cabbage soup with bacon ......

I posted it a few years ago but only on my Facebook page but I've been trying to finally get it on youtube and my website. I guess there were different names for this soup but I can only remember my mom and dad calling it lob Scouse. Enjoy Bonita

    Love Parsnips . I peel and cut in scallops size pieces and lightly brown in butter 3 Parsnips.Then add a pound of scallops till done and add 1 qt. Half and half and let it set for a hour . This is a family favorite. And I will make your Cabbage soup it is different then one I have . Looks delicious. . Just thought I would share a favorite of ours too. God bless.

    I am a senior and this is just about the best soup I've ever made. I used a smoked pork hock. I think the parsnip is missing from your list of ingredients, but I put it in, like you said in your video. I have shared this link with all my friends. It's so good! Thank you Bonita!

    Wow - yet another simple but elegant dish. So tasty and nutritious ~ I know because I make similar soups though not quite as good as this. Cabbage is proof there is a god (or, if as some prefer, a goddess) somewhere. It is very affordable, highly nutritious, very filling, easy to cook, and, unlike kale or spinach, it absorbs the flavor of the soup stock. And yes, in the cold or flu season, each of us want to have our bellies full of this type of soup to enrich us against any possible seasonal illnesses. Eat cabbage and you will live a long healthy life. I also like the fact that you included parsnips. Frankly, I am puzzled as to why so few people in this region (Upper Plains comprised of Minnesota-Wisconsin-Iowa) eat parsnips. It is also highly nutritious and adds much flavor to your soups or casseroles.

    Thanks for all your amazing recipe's Bonita! I'm the only one in my family left in Ontario (everyone has gone back home to Newfoundland). I was wondering, since I don't eat beef or pork, are there alternatives? I don't want to lose out on lots of flavour, but I've never replaced salt beef/pork before. Thanks love!

      Hi Anthony: Thank you for your message and for visiting my channel, we often cook without beef or pork and the meal still tasted delicious. If you are making this cabbage soup start a base by frying some onions and celery in a frying pan and adding your seasonings. Start with 1 tbsp of butter or margarine, then 1/2 tsp sea salt, 1/2 tsp pepper, 2 chopped cloves of garlic, you can use a chicken or vegetable oxo seasoning or stock/broth after you fried down the onions and celery to deglaze your pan. Then pour all of this into your boiler with all the other ingredients and half way through cooking taste your soup if you need anymore seasonings just add to taste.     You are such a warm kindhearted lady! And your video is really wonderful too!! I love cabbage soup--cabbage is delightful to use! I have a question though; could I use beef shank or beef short ribs with this? And what was that other sweet vegetable you had-I didn't catch that.

The vegetable I was talking about is parsnips and they are a sweet white root vegetable, but so delicious and in a soup.     Labskaus in Germany is very different. Made for men on Ships with once bad teeth.
    Boil corned pork or corned beef, boil potatoes and beets. Maybe 2:3:1 parts. Or as you like it. If tender, put all in mincing machine. All together! It will look like - let's call it - Dog food. But it can be pretty good. And don't forget the pickled cucumber. One per plate. AND a piece of fresh parsley.
    It is like Scottish Haggis. You love or you let it.

    Looks good. It's on My List,To Make. 😊 In another,Community in NL I was in 2009. I Don't need, To Say Where but The Liquid after the Boiled Jiggs Dinner Is "Pot Liquor ".     Im NOT a cook BUT love making all kinds of stews and soups. Tonite
    Cabbage Stew
    1- Qt Low Sodium chicken.stock
    1- O'Doulls dark beer
    1- Cup of Chardonnay
    Spring water
    1-Hormel Pork T.Loin
    1- Smoked Ham steak
    Browned ground pork
    1- Cabbage
    1-2 Vid.Onion
    Russeet Potato's
    Yams ( not too much)
    TONS of Garlic
    Carrots
    Celery
    Pea's
    San Marzano Tomato's
    ( Not alot. Enough to give it a zing and for color)
    1- Large can of B&M Bacon and Onion baked beans .
    Cracked black peppercorn
    NO SALT
    If it is missing something I cant put my finger on........I resort to the one thing that ALWAYS bails me out. Add some RED THAI CHILI SAUCE.
    It is truly amazing what it can do to pretty much ANY DISH ! I may not need it but I have my back up ingrediant. 😎👌👍

    I must have missed it, but why was the cabbage crunchy when it was added to the pot?

      The cabbage was uncooked when she added it. Uncooked cabbage is crunchy.

      Hmm, I've cooked a lot of cabbage but never had it crunchy like that. She mentions at 3:18 that she soaked it overnight, I wonder if it was soaked in salt then drained and as a result dried and became crispy?

      You are right that she said that soaked it overnight. I missed that part. I have never done that. However all of my cabbage that is raw is crunchy. That is how I get a nice crunchy coleslaw. Anyway, she is very, very responsive, I am sure that when she gets a chance she is going to come here and clear it all up for you. She is an amazing individual. :-)

      Thank you for your message and for visiting my channel, I love that we got so much response on your question. I try to soak my cabbage heart after cutting it up over night or for a few hours, this brakes the cabbage leaves away from each piece and cooks it faster. But if you don't want to soak it just cut it up in small pieces and put it into your boiler with your salt beef or ham bone or just sea salt water. Uncooked cabbage heart is crunchy and we are getting fresh grown cabbage right now and it is so good, after you part boil your cabbage it will soften enough for you to add the other vegetables.     Long grain rice is best used as it will thicken the soup. Minute rice won't.
