    I made this cake and added some sour cream. It was extremely moist and tasted almost like the ice cream. I used ermine frosting and added the Oreo filling to the butter while it was whipping. It was the perfect combination. Italian meringue buttercream is still my favorite as I found the ermine wasn’t as fluffy and smooth as the Italian buttercream. The cake is in the fridge and is still moist!

    I have a question I made this cake and left it in the fridge to eat the day after and the buttercream got very hard and was so hard to eat the next day is it not recommended to leave in the fridge to eat the next day? Or leave the cake out for the buttercream to melt ?

    • @SugarGeekShow
      @SugarGeekShow  2 роки тому

      Yes I would recommend refrigerating it and covering the cut part of the cake slice with plastic wrap to keep it from drying out. Room temperature cake will always be better to eat than cold cake, so I like to take my cakes out about an hour before I’m going to eat them. I’ve always microwaved a slice for a few seconds to warm up that butter in the frosting 😂 Hope this helps!

I don’t usually like it very sweet myself, so I’ll add about 20 oz of sugar and then will taste it to see if I want it more or less sweet. After baking? Or after the crumb coat? After baking the cakes, you can let them come to room temperature before frosting or freeze them for 30 mins. But you don’t want to frost them while they’re still warm. After the crumb coat, you can put it in the refrigerator or the freezer to firm up a little bit. It’s just good to firm up that layer of frosting to seal in all the crumbs before the final coat.
