EASY CHOCOLATE CAKE RECIPE ►
10 ounces (284 g) All-Purpose Flour, 2 cups spooned in and leveled
14 ounces (397 g) Granulated Sugar, 2 cups
4 ounces (113 g) Cocoa Powder, 1 cup
1 1/2 teaspoons Baking Powder
2 teaspoons Baking Soda
1 teaspoon Salt
2 large Eggs room temperature
8 ounces (227 g) Buttermilk, 1 cup
8 ounces (227 g) Hot Coffee (or hot water), 1 cup
4 ounces (113 g) Vegetable Oil, 1/2 cup (Add 1 extra ounce for a moister cake)
2 teaspoons Vanilla Extract
STABILIZED WHIPPED CREAM RECIPE ►
16 ounces (454 g) Heavy Whipping Cream, 3 cups
3 ounces (85 g) Powdered Sugar, 3/4 cup
1 1/2 teaspoons Vanilla Extract
1 1/2 teaspoons Powdered Gelatin, KNOX or something similar
2 Tablespoons Cool Water
1 1/2 teaspoons Heavy Whipping Cream
GANACHE DRIP RECIPE ►
6 ounces (170 g) Semi-Sweet Chocolate, 1 cup
4 ounces (113 g) Heavy Whipping Cream, 1/2 cup

I made this cake today. Now I know what she meant by "work fast" because as I was ready to put the cake in the freezer, the middle layer of ice cream started melting and the frosting began to separate. Also the the measurement for the stabilized whipped cream and chocolate ganache is excessive. You can get away making half the amount and it'll still be enough for the cake. Still, thanks for this wonderful recipe. It was easy to follow and looks like it was made by a a professional. My 4 year old son keeps saying, "this is the best birthday ever!" So thank you for that, Liz!
Update: I just wanted to add that I used Hersheys special dark + the hot coffee and the chocolate flavor came out a little too intense (adults enjoyed it but the kids did not). Hershey cocoa would probably work better. This cake recipe is moist and dense for those that are wondering.
I'm a mom of twins. I always make their cakes for their birthday. My family always say you made two cakes? And I always say YES they are two separate people. Last year when my twins turned 11 I made my daughter an icecream cake and it was so yummy. I made my sun a chocolate and marble cake with chocolate ganache.

This cake was super delicious. I swapped the coffee with chocolate milk and it tastes really good. I made a lactose free version and it was a show stopper. The cake tastes better when frozen also. Will definitely make it again. Thank you for the recipe!

I am just a 10 year old child and i made this cake for my 11th birthday. I liked it so much, the cake was moist and soft and with the ice cream i tasted soo good.
We used to have solid ice cream cakes from dairy queen. I remember when i was visiting my aunt we had an ice cream cake with actual cake. I can tell you its like 100x better. I can't find any cakes like that again so i gotta make it myself!

Made this cake this weekend and it came out amazing! The whipped cream has little bits of gelatin, so not sure what I did wrong there but other than that, it looks beautiful and was so easy to make following your tuturial!!!
Ive definitely had the frosting problem many times. It might be making gelatin pieces if your whipped cream is too cold, or your gelatin is too hot. Make sure to make their around the same temperature and slowly add the gelatin :)

My mum makes a similar chocolate cake, but instead of coffee she uses hot chocolate. I'm not sure if it gives the same effect but I love it!
You should try it with coffee, it brings out the chocolate flavour.
I also use hot chocolate!!!
I’ve done both and the hot chocolate in my opinion is way better than coffee 😉
Sorry one more thing… I used Mexican hot chocolate!
