      I'd take a good pancake over a good waffle, but I find it easier to come across a good waffle. On average, I'd still choose pancakes over waffles, though :)

    sometimes i will just fry up my sourdough discard as it is in butter and sprinkle some green onions on one side with flaky salt-so good

    Had a flash back to my youth - 60's/70's - when I seem to remember sour dough pancakes were everywhere. But they were little thin things. These look great and love the addition of corn meal! Plus everything you said about breakfast (eggs) and pancakes (home made; need nap) - all truth!

      In essence, you mix flour and water and leave at room temp. You should start seeing bubbles and activity after a couple of days. Then you start feeding it daily to build the yeasts and fermentation activity. There was an excellent video by Jennifer Latham, head of bread at Tartine, posted to social media towards the start of the pandemic.

    Just made these today and let me tell you… they are the best pancake I’ve ever had! I added 3 tbsp of brown sugar to the dry ingredients, a sprinkle of cinnamon, and some vanilla paste to the wet ingredients. The pancakes were so fluffy and perfectly sweet on their own. I thought they’d be a tiny bit sour due to the whole cup of starter but they weren’t! I think the starter just added to the airy texture.

    Just tried this recipe! It’s delicious! I’m new to sourdough starter, started mine from scratch so ours were made from fairly young starter discard. Also living in CO, so altered recipe to a little less than 1 tsp of baking powder, and closer to 1/4 tsp baking soda. Worked wonderfully! Will be making this again! Love you Claire!

    I made these last night and they were the best pancakes I’ve ever had!! Added a tiny bit of vanilla extract but made it per the recipe for everything else. So so good with the cornmeal yum

    I made these pancakes this morning and my mind is blown! I have NEVER had a flavor profile like this! They came together in a quick minute and cooked up in a flash. I tossed in some strawberries and freeze dried peaches to a few. The tang from the starter and sweetness of the fruit was a perfect combination.

    Wonderful video! I love your explanations & small enhancements from the norm. For me, it’s the soaked cornmeal! I make waffles with a very similar recipe like yours. Next time, I’ll add the cornstarch. I make 8 Belgian waffles with my recipe, we eat 2, & freeze the rest. Butter and real maple syrup, jam & sour cream (or good yogurt)…Yum!

    Omg i've never even thought about the griddling effecting the pancake. I always have hit or miss pancakes even when I follow a recipe to the nose. Def need to think about the heat and oil/butter!

    OMG!! My friends always found my method/preference for homemade pancakes that are ALMOST fried (ie, enough butter and with a dark/burnt crispy rim/edge) to be crazy! But I call it DRIZZLE-LET-IT-SIZZLE!!! I saw your crispy edged pancakes and I feel SEEN!!!

    My mother made pancakes using a recipe from her 1950’s Betty Crocker cookbook. She whipped her egg whites and folded them in, too. They were great! You had me at ‘cornmeal’ l love cornmeal pancakes! But, we differ on how to cook them. I’m one of those who looks at your’s and thinks they’re burnt😮 I cook them low and slow, not putting down oil or butter after the first ones. No crispy pancakes for me! I’ll give your’s a try using my method and see how they turn out.

    I work in a health care facility, and since then I've rethunk my whole method of eating them, I prefer 1 large with lots of butter and syrup. Those looks awesome and I've always wanted to make a bread starter.

    Growing up in the '70s, my Mom cooked pancakes in Crisco for crispy lacy edges, and I'm probably still carrying some of that Crisco in my arteries today. Worth it, though!

    Light, fluffy pancakes. Yes, please. Can anything get a day off to a disappointing start faster than a heavy, leaden pancake?     I didn't expect that much from making this pancakes because I never had success in making the best tasting pancakes, its either its too sweet, too salty, not fluffy, dense, burnt, or undercooked. But from the first bite of the first pancake from this recipe, it jumped to #1 in the list of pancake recipes I made. Its so fluffy, and tasty, not too sweet, not salty, and smells heavenly like biscuits. I used Brian Lagerstrom's sourdough starter recipe.

    If you get the chance, try making the gingerbread pancakes from the Gourmet cookbook( the big yellow one). I love pancakes! I'm going to try a little bit of the cornmeal like Claire did because I love cornbread too.

    Hey Claire! I have a question: Could you make the batter (exept the egg white mix) and let it sit in the fridge for 1-2 hours so the sourdough would contribute to the levening factor and then beat the egg whites and add them? Or would that ruin the texture? Thanks for the simple explanation of what a starter is! You reall know how to transfer knowledge which I highly appreciate!☺❤

    We often bake biscotti with our discard! Further utility there is that they also keep for almost forever so there's no hurry to get through them :)

    Can you please show more recipes with leftover starter? Especially for just 2 people (this is too many pancakes for 2 imo since we like eggs more). I made starter 2 years ago but there was too much waste so I couldn't keep up with it...thanks!
