hi! so im in the middle of this process and my dough is sticky, its everywhere and im ready to kill god. will update if i make it out alive. update: my bread turned out pretty good!! not as airy but i think thats bc i used mostly rye flour.. the crust is very crispy and the little heart that i scored into it made it through baking. the nervous breakdown last night was worth it lmao!!
Mine came out really sticky too. Hopefully it proofs well in the fridge tonight. I didn’t have spelt flour so I just used organic unbeached all purpose.
A bit late but if yalls bread is sticky it's mostly because of lack of gluten development, slap and folds and stretch and folds are both Lifesavers along with a bench scraper to help clear it off if it does stick

hi! so im in the middle of this process and my dough is sticky, its everywhere and im ready to kill god. will update if i make it out alive.
update: my bread turned out pretty good!! not as airy but i think thats bc i used mostly rye flour.. the crust is very crispy and the little heart that i scored into it made it through baking. the nervous breakdown last night was worth it lmao!!
OMG nooooooo 😂 yeah rye is really really sticky; should not be used as the majority flour, especially with so much water in the recipe.
Mine came out really sticky too. Hopefully it proofs well in the fridge tonight. I didn’t have spelt flour so I just used organic unbeached all purpose.
A bit late but if yalls bread is sticky it's mostly because of lack of gluten development, slap and folds and stretch and folds are both Lifesavers along with a bench scraper to help clear it off if it does stick
