Sufganyiot!! I first made them when my kids were little, in the early 2000s - from a Martha Stewart recipe, of all things. Mine were much smaller, 2 bites for an adult. They were my first venture into deep frying. I also don't normally like donuts ... except when they're less than 15 minutes out of the fryer. The taste changes *a lot* after that.
Those can be bought en masse around carnival in Germany, usually avaiable all year. They are called Pfannkuchen or Berliner - depends on where you are.

Those donuts look a lot like our traditional "sonhos", a pastry we have here in Brazil, normally filled with doce de leite (dulce de leche) - and sometimes with pastry cream.

Hey , you don't necessarily need a stand mixer. You could do this by hand, it will be a little more time consuming , but it will eventually come together.

I made these yesterday as Christmas gifts to take to a party, but I filled them with pastry cream instead. These turned out so amazing and really yummy.
So many places make donuts too sweet. My favorite shop makes one that's filled with raspberry jelly and a super light, fluffy, barely sweet type of cream and it balances out so nicely. Its a 30 minute drive that I make at least once a month because I crave them.

In the book it says let rise at room temp for 1 1/2 hours then put in the fridge overnight, but in the video it says 4-8 at room temp. Which One should I do?
So I’ve run into the issue where my donuts aren’t cooking all the way through and have the darker brown ring around the middle rather than the light pale ring. I know that they’re not underproofed as I’ve been quite generous with the wait time for both rises. My only thought is maybe they’re too cold? I can’t keep them out to room temp as here in Australia we’re averaging 35°C days at the moment
We do something very similar here, bus instead of making a hole and filling it up, we cut it in half letting only a small part connected and fill it with cream or any kind of sweet thing we can do XD. The entire thing is exactly the same even the sugar on it. Looks tasty Claire! :D
The little supermarket at the camping I always go to in French serves these for breakfast :O they had chocolate, strawberry and apricot filling and the apricot one was the best!!

If you wanted to get fancy, you could probably get a dozen mini donuts out of the scraps without rerolling
You could maybe make a mini loaf of pull apart bread as well with the scraps.

I use mine to mix meat loaf, pancakes, waffles, pizza dough. Anything that’s to thick for a whisk and needs more then a spoon.
