I've never had a plantain in my life believe it or not! But anything is good with cheese right haha and I'm loving the pickled cabbage slaw! Great snack, love it!
Looks like I need to make another long trip to get some plantains. Latin section at my grocer??? Hahaha! Not in England, but I have substituted halloumi without complaint in the past. My Nica girl says this reminds her of her grandmas house in Nicaragua.

Panela cheese isn't a bad substitute. It could definitely work. You can find "queso para frei" in a central american market
