    Hi Nata! This cake looks INCREDIBLE! I love rum cake and adding the pineapple is awesome! The secret ingredient is so perfect! Such a great idea! Such a perfect flip and all the cherries stayed in place! Great tip on adding holes for the rum glaze. Your taste test reaction is GREAT!! 🌺😊🌷

    I love pineapple upside cake! And now you just took it up 5 notches by using rum!! Can’t wait to make this, I just bought a big bottle of Bacardi!! I wonder how Malibu coconut rum would taste. Pineapple and coconut pair so well 🥰

    Two suggestions/thoughts?
    What about substituting for cake flour?
    What about substituting out some (Say 1/3 to 1/2?) of the pineapple juice in the batter for additional rum?

    I'm down with this, but have you tried replacing half the flour with polenta? It really adds texture and colour to the finished product. Looks like I need to buy some rum tomorrow!

    3rd time making this. It keeps getting better. It's dense, deep flavor. I butter my pan before laying in the topping and fruit. But after the bake and cool, I still don't get a clean flop out of the pan. In) will invert over another pan and it slowly drops. But some pieces stick!! Am I letting it cool too much in the pan?

      I'm so glad you continue to enjoy the recipe! For easy flipping, I definitely recommend using a sillone pan
