I'm down with this, but have you tried replacing half the flour with polenta? It really adds texture and colour to the finished product. Looks like I need to buy some rum tomorrow!
3rd time making this. It keeps getting better. It's dense, deep flavor. I butter my pan before laying in the topping and fruit. But after the bake and cool, I still don't get a clean flop out of the pan. In) will invert over another pan and it slowly drops. But some pieces stick!! Am I letting it cool too much in the pan?

I'm so glad you continue to enjoy the recipe! For easy flipping, I definitely recommend using a sillone pan
