Nice, I have two questions, why did you lime instead of naranja agria? Why did you use black beans? A Nicaraguan gallo pinto is made with small red beans. Queso seco is not the same as queso Cotija. Queso seco turns Golden when fried, not burned. The salad is never made with any type of chile. A hot dipping sauce is use instead. Be more authentic.
You could use both beans and my mom still makes it that way, never heard of naranja agria on our salad or beef. What city of Nicaragua you’re from and every city have its own ingredients.
